Pancakes with whey and potato broth

Ingredients

Serum 600 ml
Potato broth 600 ml
Egg 3 pcs
Flour 2.5-3 cups
Soda 1/2 tsp
Vegetable oil 2-3 st. spoons
Salt 1 tsp
Sugar 1 tsp

Cooking method

  • Heat the whey (I warmed it in the microwave), add soda, salt and sugar, stir. Pour the flour in parts (more or less flour may take), stirring until a thick dough is obtained (like pancakes), beat in the eggs, stir and continue stirring, pour in the potato broth (I have it salted and cold). You should get a thin "silky" dough. Cover and let stand for about 20 minutes. Then pour in vegetable oil, stir and you can start baking pancakes. I baked in two pans on a regular stove. I didn't grease the pans. If the pan is not non-stick, then grease before the first pancake.

10 min kneading, 20 proofing, 30 baking

I slightly corrected the recipe - I make such pancakes very often, but in a different way - hotter! Potato broth, if it is already cooled, (or from the refrigerator), I heat it in the microwave to a boil and pour it into the dough, while stirring it with a whisk. You can, of course, whip with a blender, but manual whipping suits me. If the dough is still thick, you can add a glass of boiling water and stir again. Now let the dough come to its senses for about 15 minutes, add vegetable oil, mix again and you can bake pancakes.
I have been using this "brewed" method lately. These pancakes are very helpful with both potato broth and whey! Ready cooled pancakes can be stored well for up to 3 days in the refrigerator without losing their taste. I roll a few pancakes into a roll, put the pancake rolls in a suitable sealed container and store in the refrigerator. As needed, I take out as much as I need, heat it up in the microwave and pancakes, as if only baked!
