Ingredients

pumpkin puree 200 gr.
whole grain flour 250 gr.
sugar (roughly) 50-90 gr.
vegetable oil 2-3 st. l.
soda 3/4 tsp
spices

Cooking method

  • 1. We make pumpkin puree - I make in the microwave: pumpkin in cubes in a glass saucepan + a spoonful of water, time depending on the power of the microwave and the amount of pumpkin. Then I just knead the pumpkin with a spoon right in the same saucepan, when it cools down I weigh 200 g. the resulting puree.
  • 2. I add sugar (the amount can be selected according to your taste and depending on the sweetness of the pumpkin), spices (orange peel, cinnamon, cloves are well suited), vegetable oil - grind / mix.
  • 3. Add soda (slaked) and whole grain flour. I mix everything with a spatula, you can use your hands. The dough is soft, slightly sticky.
  • 4. Forming - I divide the dough into 4 parts, roll a sausage out of each directly by weight, tear off the pieces and put them directly into the pizza oven on a silicone mat. Then I roll these pieces into balls. All.
  • 5. I bake cold 15 minutes + 5 minutes off.
  • 6. You can sprinkle the cookies with powdered sugar, I had powdered sugar with cinnamon.
  • Another option is Orange whole grain biscuits
  • (I will not do it as a separate recipe, since everything is the same). The only difference is that
  • 1. I peel off the zest from the orange into a bowl with a grater, peel it from the white pulp, remove the seeds from the slices, if any, and grind in a chopper / blender. I take 150 ml (this amount is obtained from one regular orange) and add to the zest.
  • 2. I add sugar there (the amount can be selected to your liking, but since an orange is not a pumpkin, it is better to start from 90 grams), at will and taste of spices (cinnamon, cloves), vegetable oil - I grind / mix everything.
  • 3. Add baking soda (not quenched, enough orange acid) and whole grain flour. I mix everything with a spatula, you can use your hands. The dough is just as soft.
  • 4. Forming - you can roll and cut cookies - but I like "buns" more like pumpkin.
  • 5. I bake cold 15 minutes + 5 minutes off.
  • 6. You can sprinkle with icing sugar.
  • Outwardly, they are the same as pumpkin seeds, and the taste is pronounced orange.

Very simple biscuits without eggs or butter.

Soft like buns, fragrant if done with spices - pumpkin is not felt at all. Often I make myself for tea in the office instead of the purchased one (more than enough for a week). Store in a container, remain as soft.

Baked even less, 12 min + 3 min. on off Princess. During this time, everything was baked, the frying of the bottom is normal. I was afraid to bake for a longer time, since I do not have a silicone mat, and Teflon is very tricky. Sugar put 60 grams, and the puree was a little sweet. The cookies are not sweet at all. So those with a sweet tooth can take all 90 grams of sugar. Thanks for the recipe, there is still pumpkin puree in the freezer, I will repeat. And I am with the report .... Only for me it is no longer whole grain, but gluten-free.
Frozen pumpkin and a mixture of "flour": flaxseed, corn and amaranth. (only 230 gr.). I also had to add a bit of liquid (rosehip syrup was on hand) and oil.
Due to the linseed flour, the cookies are dark. Delicious, crumbly ..., gobbled up with the child.

It seems to me that it was not the amount of sugar that affected, but the flour. Whole grain can be different, I baked from "Garnets", and from "French thing", and from "Ryazanochka" - there was always normal baked goods. The only thing, somehow there was "The Magician" - and from it, while observing all proportions, some cookies also turned out to be harsh. But in this flour, in comparison with all the rest, even visually there were more large parts / bran.
So try it or with another flour (you are in St. Petersburg? I switched to the Ryazanochka CZ since autumn - I really like it, and the bread and pastries turn out well, the price is not cruel 49 rubles / kg, and the main thing for me is always near the house, in "Spara", you do not need to stock up) or reduce the amount of your flour, or add a little water. Try half the serving. It should turn out

With the given proportions, a dough is obtained, which can, in principle, be rolled out. And here I experimented with a smaller amount of flour - I made it in a keypop, and I got the most delicate cupcake balls.

I baked orange cookies according to the recipe. Sugar put 90 g, for us it was very little, for my taste some kind of "doctor's" cakes turned out, if anyone remembers Soviet doctor's buns. I also mistakenly flattened the cookies with a fork, which made them dryish-flatbread. I didn't flatten the last few pieces - it's much tastier.
