Ingredients

Corn flour (very finely ground) 150 g
Cottage cheese 75 g
Butter 75 g
Kefir 50 ml
Egg 2 pieces
Baking powder 1.5 tsp
Stevia 0.5 tsp
Zest of 1 orange
Orange juice 2 tbsp. l

Cooking method

  • Recently, my task was to select and bake something delicious for a child with diabetes. What a pity for such children !!! After all, you need to control the level of sugar in the blood and limit the intake of carbohydrates into the body. And so you want delicious treats !!! This meant that I could not use sugar and wheat flour in baking either. The result is a gluten-free cupcake made with cornmeal and stevia with cream cheese, topped with a ganache cap made with sugar-free dark chocolate.
  • In a separate bowl, beat the stevia butter, add the cottage cheese and beat again.
  • Whisking the mixture, add eggs one at a time. Beat for about 1 minute after each addition of eggs.
  • In another bowl, sift the flour and baking powder. Grate the zest here, mix.
  • Gradually mix the dry mass into the liquid mass. Mix well and gently.
  • Gradually add kefir, orange juice.
  • Put the dough into molds and bake in a preheated oven at 180 C for about 30-40 minutes.

  • I filled the finished cupcakes with cream cheese and made a hat of ganache based on dark chocolate.
