Dumplings with cottage cheese and potatoes

Ingredients

Dough
milk 130 ml
water 50 ml
chicken egg 1 PC
wheat flour 2 glasses
oil pods. refined 2 tbsp. l
salt 1 tsp
Filling
potatoes 600-700 gr
cottage cheese 400-500 gr
greens (parsley, dill) optional by beam
salt, ground black pepper taste

Cooking method

  • Cook potatoes "in their uniforms", peel.
  • Grate potatoes with coarse holes.
  • Combine potatoes, cottage cheese, herbs, salt, ground black pepper. It is not necessary to knead much, it is tastier so that the "graininess" remains in the filling
  • Knead the dough in a way convenient for you. I kneaded in HP
  • Form the dumplings in the usual way convenient for you. I rolled and formed the dumplings with the Tupperware triple dumpling pan.
  • You can simply roll out the dough 1.5 mm thick. Cut mugs with a glass. Put a tablespoon of the filling in the middle of the mug.
  • Blind dumplings.
  • Put the finished dumplings on a kitchen board or a large tray sprinkled with flour.
  • Bring the water to a boil. Salt. Boil the dumplings in boiling water in portions (about 3-4 minutes).
  • After setting the dumplings, be sure to stir them with a spoon to prevent the dumplings from sticking to the hot bottom of the pan.
  • Cut the onion into cubes or half rings and fry in vegetable oil. Season ready-made dumplings with fried onions (I did not do that).

Note

I suggest making delicious dumplings with cottage cheese and potatoes. The peculiarity of this type of dumplings is that potatoes for dumplings are boiled "in their uniforms", and then peeled and rubbed on a grater with large holes. In a company with delicious and fatty homemade cottage cheese, a very interesting filling is obtained.
It should be remembered that such dumplings simply ask for a large amount of dressing in the form of fried onions. It is with such onions, and not with sour cream or melted butter, that they will be most delicious.
This is how I usually always made such dumplings, poured the prepared dumplings with onion frying. But now I try to avoid cooking a lot of fried, so I decided to serve it with homemade sour cream.
The dough for these dumplings is not important to take mine. You can knead the dough according to your favorite recipe. The main thing here is as a filling option.
