Wheat apple bread with flax flour

Ingredients

Cooking method

  • In the evening, feed the leaven so that in the morning it is 90 g.
  • In the morning, knead the dough, leave for 2 hours until ripening. Then mix all the ingredients until the flour is soaked without salt and leave for 20-30 minutes for autolysis.
  • Start kneading the dough (I do this using a planetary mixer), add salt after 2 minutes, and butter at the end of kneading. Knead the dough so that it lags behind the walls of the dishes. If you bake the dough in a mold, you can make the dough a little softer. Then the bread will turn out more magnificent. If you bake a hearth, then knead a little steeper.
  • Transfer the dough to a bowl greased with vegetable oil and put it on a proofer in a warm place (I have an oven with the light on) for 2-2.5 hours with a kneading in an hour.
  • Then arrange the dough in accordance with the selected baking method. Put the hearth into the proofing basket, the mold into the mold. Place in a warm place for final proofing for 2-3 hours. Preheat the oven to 250 ° C 0.5 - 1 hour before baking.
  • Bake for the first 15 minutes with steam, 20-25 minutes without steam at 220 ° C. Wrap the finished bread in a cloth and leave it on the wire rack until it cools completely.

Before filling out the recipe, I reviewed the section "Bread MIX on sourdough", I did not find a similar recipe. M. b. there is sourdough bread in other sections, but there was no time to review everything.
This bread, however, as always with me, was born from another, but completely reworked. So there is no need for the original here. Nothing in common
As for the applesauce. Last season was fruitful for apples, so I made preparations for pies, marshmallows and bread. So I have mashed potatoes with sugar. You can take a raw apple (I did this in season) and grate it on a fine grater. I added flaxseed flour, because it helps the dough rise better, and is generally useful. You can add flaxseed additionally.
I have wheat sourdough on flour 1 s, overfed from rye.
