Ingredients

peeled carrots 400 gram
sugar 100-130 grams
vanilla taste
corn starch 120-150 grams
walnuts 100-120 grams
lemon juice (if water is used) 5-6 st. spoons
water for starch 150 grams
orange juice or other sweet and sour, if water is not used 150 grams
orange zest 1-2 tbsp. spoons
salt pinch
water for carrots as needed
coconut flakes

Cooking method

  • Rahat delight from carrotsAdd sugar, add 3-4 tablespoons of water. Put the minimum amount of sugar, it is better to add it later, if necessary. Stir, cover and put on low heat. Stir very often so that the carrots do not burn.

  • Rahat delight from carrotsSqueeze the juice from the lemon.
  • Rahat delight from carrotsWhen the carrots are almost ready, add salt and zest. Stir and continue to simmer. If necessary, add a little water during cooking.

The idea of ​​this recipe was spied in a culinary show on Ukrainian television. Given the recipe, I redid it, you can say completely.
Dish for everybody. No carrot aftertaste or aftertaste. I removed it with zest, vanilla and juice.
A very good substitute for fasting sweets. It was delicious for us. Recommend!

I decided to make it from pumpkin, because it was already cooked. The styling mold was too large, the layer came out only 1 cm.At first I was unable to roll the pieces in the coconut flakes. I began to roll it in powdered sugar, and then the unexpected happened (maybe just for me). The powder pulled the moisture out of the Turkish delight, and I rolled them in shavings. But only half. I thought it would be too sweet. I liked the taste, the pumpkin is not felt at all (my husband hates the pumpkin, he ate it, said it was delicious). I don't know why, but it tastes like starch. But not critical. M. b. try with potato starch?

Well done for trying. This is all for an amateur, as I wrote. I didn’t collapse as I wanted. But when the condensate went from the temperature difference, it collapsed normally. Corn starch, if someone senses, can be replaced with potato starch. This is what I do most often.
In my opinion, keep in the refrigerator for safekeeping. So that it does not disappear longer. Still, there are not enough preservatives here.
