Cooking method

  • Why did I call this fusion cake? Yes, because I was required to fulfill my husband's individual order for a Soviet cake, but at the same time I personally wanted it to be a euro dessert.
  • So the Soviet classics turned out in the European interpretation: why not fusion?
  • So, our favorite "Fairy Tale" cake in an unusual "Mocha" mousse dress and chocolate velor.
  • Biscuit:
  • Fusion cake Fairy taleBreak 4 eggs into the mixer bowl, add sugar and vanilla. Beat for 3 minutes at high speed. Switch to medium speed and beat for 10 minutes. We will get a very airy and stable mass.
  • Fusion cake Fairy taleSift flour into a separate bowl
  • Fusion cake Fairy talePour half of the sifted mixture onto the whipped mass. Gently stir in, pour out the other half and stir in just as carefully, trying not to sediment the mixture.
  • Fusion cake Fairy taleWe line the baking sheet (from the oven) with parchment, pour out and level our mass.
  • Fusion cake Fairy taleBake at 200C for 12-15 minutes until deep brown.
  • Fusion cake Fairy tale Remove from the parchment, cut out 3 cakes of the desired size.
  • Impregnation:
  • Fusion cake Fairy taleWell, everything is simple here: mix all the ingredients, bring to a boil and cool
  • Cream
  • Fusion cake Fairy taleWe mix milk, yolk, starch, sugar and vanilla. Put in the microwave and at intervals, stirring occasionally, bring until thickened. Cool down
  • Fusion cake Fairy taleBeat the butter. We carefully introduce the mixture obtained in the previous paragraph.
  • Fusion cake Fairy taleWe saturate each crust with impregnation syrup.
  • Fusion cake Fairy taleApply half of the cream to the first cake. Put the second cake on top. The second half of the cream. Third cake. We freeze this blank so that it is plump
  • Mousse "Mocha":
  • Fusion cake Fairy taleWe boil the cream along with a bag of coffee. Pour onto finely chopped chocolate and stir until smooth. Cool completely and then chill in the refrigerator for at least 1 hour.
  • Fusion cake Fairy talePour gelatin with cold water and let it swell. Then heat until dissolved.
  • Fusion cake Fairy taleBeat the chocolate-cream mixture and add the cooled gelatinous mass to it.
  • Fusion cake Fairy talePut 2/3 of the mousse into the mold.
  • Fusion cake Fairy taleWe spread the collected biscuit part in the mold and level it with the remaining mousse.
  • Fusion cake Fairy taleWe send it to the freezer for at least 6 hours.
  • Fusion cake Fairy taleFor chocolate velor, mix melted chocolate and melted cocoa butter. At a temperature of 35C, cover the cake with velor from a spray gun
  • Fusion cake Fairy taleWell, I enjoyed the process, and my husband gave an A for the taste!

Note

"I'm tired of your euro cakes. I want a Soviet cake for my birthday," my husband told me.
"Well, yes, well, yes ..." - I thought, firing a brand new spray gun.
This is how the idea of this cake was born, because for me the main thing is pleasure from the process, and for loved ones - so that the eye pleases and the stomach pleases)))
I seem to have coped with the task)))

No no no. The biscuit naturally remained. It's just that I'm not trifling, I make a baking sheet according to these proportions and cut out blanks for anything)
Eggs are large: 60 g each without shell.

Velor also remained - 30 g. Weighed the rest. Form volume - 1.3 l
