Ingredients

potatoes 900 g
butter 6 tbsp. l.
cheese 120 g
beef broth 240 g
garlic 1 tooth
salt 1 tsp
pepper 1/8 tsp

Cooking method

  • Gratin SavoyardPeel the potatoes.
  • Gratin SavoyardCut it into 3mm slices and place in a bowl of cold water.
  • Gratin SavoyardGrate the cheese.
  • Gratin SavoyardGrate a baking dish with chopped garlic cloves and brush with 1 tbsp. l. oils. The dish should be flat d = 25 cm. Height 5 cm.
  • Gratin SavoyardDrain the potatoes and pat dry with a kitchen towel.
  • Gratin SavoyardPlace half of the potatoes on the bottom of the mold.
  • Gratin SavoyardSprinkle the potatoes with half the salt, pepper, cheese and butter.
  • Gratin SavoyardTop with remaining potatoes, salt, pepper, grated cheese and butter.
  • Gratin SavoyardBoil the broth.
  • Gratin SavoyardGently pour the boiling broth over the potatoes. If the form allows, then put it on fire, when the liquid in the form boils, move it to the upper third of the oven preheated to 220 C. Bake for 20-30 minutes, the potatoes should become soft, the broth should be absorbed, and the top should be browned.

Recipe from Julia Child's book "French Cooking Lessons" v.1
If in the recipe replace broth with milk and reduce the amount of butter to 4 tbsp. l., then get Gratin Dauphinois (Gratin Dauphinois).
Gratin Savoyard goes well with roast beef, pork, lamb, steaks and chops. Gratin Dauphinoise goes well with baked or fried chicken, turkey and veal.
