Ingredients

For kebabs:
Chicken meat (I have thighs) meat from 4-5 thighs
Sweet pepper 1 PC.
For the marinade:
Sweet paprika 1 tsp
Curry 1 tsp
Soy sauce 2-3-4 st. l.
Sparkling mineral water to slightly cover the meat "shoulder-length"
Salt to taste
For the sauce:
Tangerines 5-6 pieces are not small
Butter 20 gr.
Corn starch 1 tsp without slide
For frying:
Odorless vegetable oil 1-2 tbsp. l.
Butter 1 tbsp. l.
For garnish:
Rice
Curry
Coarse sea salt

Cooking method

  • I share with you my discovery of taste. I saw this recipe on the Kitchen TV channel in Pavlov's non-trivial kitchen program. The recipe impressed with the simplicity of preparation, the use of ingredients that are in the refrigerator, as well as its unusual combination of tastes. I decided to try cooking for a family Friday romantic dinner. And I didn’t just regret it, but simply amazed by this taste and I am happy to put it in the piggy bank of my permanent home recipes and share it with you.
  • I don't like sweet second courses. But contrary to my fears, the dish is neither sweet nor sour. The taste is absolutely balanced. Just in moderation. Delicious.
  • The meat is best taken from chicken thighs. Ideally, of course, remove fat and skin. But in my family, this is always the most delicious, so I did not cut it. The dish has lost its dietary properties. Therefore, if you want to make it light, then take clean meat.
  • Trim and marinate the meat in soda water and spices. Crumble sweet peppers in large pieces.
  • Leave the chicken to marinate for at least 30 minutes. Soda water should be poured just enough to cover the meat "shoulder-length". I marinated for just over an hour. The whole marinade is absorbed into the chicken. Then we put it on wooden skewers mixed with pepper.
  • We set the rice to cook with salt and curry added to the water.
  • Now heat vegetable oil (ideally olive oil) and butter in a frying pan. And we fry our kebabs well from all sides.
  • Cooking the sauce. Squeeze the juice out of the tangerine. I didn’t filter it. I got it somewhere in the area of ​​the glass. Pour into a ladle and set to evaporate on a small camphor. The juice should evaporate by about a third. Now add butter and starch there. We brew. Its color is unusually bright and rich.
  • Cover the fried kebabs with a lid and steam a little. Then we send our sauce there.

It's incredibly delicious. Marinating in carbonated water gives the meat an additional opportunity to "loosen" the fibers and "saturate" the marinade. Sweet peppers are very tasty thanks to roasting and stewing in sauce. I cannot say that the meat is crispy, but it is not stewed either. Since it does not stay under the lid for a long time and fries well. The sauce itself does not need to be salted. Its taste already takes on all the necessary notes. in general, I advise you not to get carried away with salt. It is better to use salty soy sauce when marinating meat.
