Nikolay, Hi. how you determined the end of baking-7.Baking - 66 minutes (end of cycle at 0:20).

I checked the cycles in the bread maker practically - I drove the bread maker idle (without a bucket), noticing when the engine turns on and off and when the heating element turns on.
Small flaws are possible, but I tried to calculate as accurately as possible.
For example, in program no. 2, (French bread), the smooth heating of the bucket starts 1 hour and 30 minutes before the end of baking, although it is considered that baking takes 1 hour.
In addition, I was not interested in all modes of different roasting and bread weight.
I took the simplest option - bread weight 900 g, frying - maximum.
True, after warming the bread machine, medium roasting is quite enough.

DNI, Nikolay, thanks for such a complete description
Omorale
thanks for the complete description!
for kneading yeast dough I always use mode 8. but I think everything .. maybe it would be better all the same 10 or 11? After all, the longer you fiddle with yeast dough, the better?
just somehow you have to catch the moment so that the dough does not start baking.
or not to be smart already, but to continue to use 8
