Sauerkraut cabbage soup with duck and dried mushrooms at Moulinex CookForMe

Ingredients

Duck 1/2 carcass
Bulb onions 2 heads
Potato 6-7 pcs
Sauerkraut Taste
Dried mushrooms Handful

Cooking method

  • If yesterday there was a baked duck for dinner (and I almost always bake 2 pieces each), then today there will be sour cabbage soup for lunch)) of course, you can cook them from fresh duck (or beef), but if you make an effort on yourself and cook on the leftovers baked, you will understand me))
  • Sauerkraut cabbage soup with duck and dried mushrooms at Moulinex CookForMe
  • These cabbage soup is especially tasty after the new year, when salads have already been overeat, and half a goose / duck lies on a platter and, of course, no one wants it cold)
  • Enough lyrics. Let's start.
  • We take our bird (I have exactly half left), put it in a multicooker / pressure cooker, fill it with water, salt it not much and turn on the mode with pressure for 25-30 minutes, depending on the power of your assistant. While the meat is conditionally cooked, let's prepare the rest of the ingredients. We need whole potatoes, don't cut them. (I often replace potatoes with a handful of pearl barley), soak a handful of mushrooms with boiling water, well, and actually sauerkraut. Determine the quantity yourself by the size of your saucepan.
  • Fry onions until very golden brown.
  • After the pan has let off steam, we catch all the meat and put cabbage, mushrooms and potatoes in the pressure cooker. We set the time for 7-10 minutes, the regime with pressure.
  • When the meat has cooled down a little, we separate it from the bones and send it to the pan (we won't leave the cabbage soup in the cartoon), send the fried onion there.
  • It remains for us to combine the broth with the meat, after kneading the potatoes with a fork.
  • Serve with plenty of green onions and dill.
  • Bon appetit))) and, of course, tomorrow the cabbage soup will be tastier if there is something left until tomorrow !!

Cool recipe!
Very close to Arka-grandmother.
I also like baked leftovers (duck, turkey, lamb on the bone) to put in soup, yeah! Very tasty broth from them, special,
Zhannptica
Nata, that's the right word !! Special))) delicious))))
Arka
Here the French, to make a delicious broth, first bake meat on the bone and just bones and vegetables, and only then they cook it. Understand!
Zhannptica

I was once at a friend's house in California for Thanksgiving. There was a splendid turkey. And on the second day, soup was cooked from the skeleton and the remains of the meat. This is how the cuisines of different nations have something in common.
And yesterday my brother brought the duck to Utolin. I'll bake it, and then I'll cook our soup with sauerkraut and barley.

Jeanne, such interesting cabbage soup! True, I have never cooked cabbage soup in my life. We have some kind of prejudice towards them, most likely an attitude. Everyone cooks borscht. Need to try.And thanks to you, I have mushrooms.
I also want to say that you are a great worker! And not only because plucking ducks and geese, freeing them from blocks, is a lot of work, but all your work requires great strength, knowledge and skills. God grant you health!
Zhannptica
Angela, directly moved me))) thanks for your concern
And cook the cabbage soup. Call them "mushroom soup with cabbage" and eat it with pleasure !!! With your knuckle made of a personalized clay shirt, they would be awesome !!!!
ang-kay
I love you and you know it. I'll cook it. And the knuckle is gone) But there will still be. I'll do it from the leftovers or I'll have to separate it right away)

Angela, Angela, cabbage soup with porcini mushrooms is very tasty, namely cabbage soup, without beets. The fragrance is not renewed. You try it and change your attitude towards cabbage soup. I'm not talking about these, with a duck, it's generally fly away
ang-kay
Hope, I most often cook borsch without beets. it's not about whether there are beets or not, it's about the way of cooking. We have cabbage soup, they just don't cook it at all. Not only me. But I will definitely try)

I mean beets, they kill mushroom flavor! If you have borscht without beets, what difference does it make what you call it !!! The main thing is that it is tasty for you and your family. Let there be borscht !!!

Jeanne, an interesting option for recycling duck. But on November 7, she baked a duck for her husband's DR. It turned out breathtaking. They ate without leftovers. But I'll bookmark the recipe 🔗
Zhannptica
Albina, so I do 2 pieces each, hunt for leftovers

Thank you. Delicious. I did it according to the recipe, but there were my mistakes, which I hope to correct when repeating.
1. There was one duck, there is not enough of it. You have to make two to cook soup not only from clean gnawed bones. Just kidding, there was still something left. And I also added the middle and wings from the chicken.
2. In the evening, I immediately unloaded everything into Shteba's bowl - meat and bones, porcini mushrooms, not soaked, my own sauerkraut, raw onion and 2 whole potatoes. After releasing steam, turned off and left until morning.
In the morning I mashed potatoes, pulled out the bones, drove them for green onions and dill, generously flavored with sour cream.
Thick rich soup. Then I'll try to do everything exactly according to the recipe.

And that's the only way I do it. Always two)))

Recently, I often make duck, which means there is a reason to cook cabbage soup. There are plenty of dried mushrooms, my own sauerkraut, so I cooked it again. This time, exactly according to the recipe, I strained and disassembled the bones before continuing to cook. Delicious!
