I did it several times. This is delicious. I had to figure out some of the nuances of the molding myself.
Baked and from the purchased pita bread. There is not much difference, but the length of the lavash we sell is not enough. The rolls are "thin". Appearance suffers. They fall and get "mess". If you are going to bake from purchased lavash, then prepare the strips right away, because the lavash gets soaked quickly and it will be difficult to cut it into separate rolls from one large one, if you grease the whole lavash and twist it into one roll.
I used sweet soy sauce to make the caramel.If you do not have this, then you can use the usual classic, but reduce it by half. Highly recommend!

I baked from purchased lavash (we sell it with huge "sheets"), I saw the recipe on the "cook".
Apple caramel do double the rate. I put half under the rolls, the second I distribute on them. I do not cover it with foil.
Alternatively, add a little cocoa to half of the curd, then the rolls will be striped. But this is not for everybody - soy sauce + zest + cocoa sounds harsh
