Beef kebbe with couscous

Ingredients

beef 800 grams
couscous 160 grams
boiling water 400 gram
turnip onion large 1 piece
greens (I have dill and parsley) bundle
flour 1 tbsp. the spoon
salt taste
ground black pepper taste
vegetable oil for frying

Cooking method

  • Beef kebbe with couscous
  • Beef kebbe with couscousPour boiling water over the couscous and leave to swell.
  • Beef kebbe with couscousPeel the onion and cut into cubes.
  • Beef kebbe with couscousFry.
  • Beef kebbe with couscousFinely chop the greens.
  • Beef kebbe with couscousCut the meat into long thin strips so that they are immediately captured by the meat grinder screw.
  • Beef kebbe with couscousTwist the meat with a meat grinder 2 times.
  • Beef kebbe with couscousDivide the minced meat into two unequal parts. Separate slightly less than half.
  • Beef kebbe with couscousAdd greens, flour, salt and pepper to the smaller half of the minced meat.
  • Beef kebbe with couscousMix.
  • Beef kebbe with couscousPut couscous in most of it. Mix.
  • Beef kebbe with couscousTwist with a meat grinder.
  • Beef kebbe with couscousAdd salt and pepper. Stir and beat off a little.
  • Beef kebbe with couscousPut a special attachment on the meat grinder and shape the tubes.
  • Beef kebbe with couscousMake the tubes small so that it is convenient to stuff them. Keep your hands moist to prevent the meat from sticking to them, so place a bowl of water next to it.
  • Beef kebbe with couscousFill the tubes with minced meat and herbs. Don't try to put in as much filling as possible. This can lead to rupture of the straw, both during forming and during frying.
  • Beef kebbe with couscousClose the filling on both sides. Trim the kebbe.
  • Beef kebbe with couscousFry on all sides in heated vegetable oil. There should be enough oil. Average fire. At the end, you can cover with a lid for just a couple of minutes. At the same time, make the fire minimal.
  • Serve as a stand-alone dish with a vegetable salad or any side dish.
  • Beef kebbe with couscous
  • Cooking is not difficult, the main thing is to do it with love for your loved ones)

The dish is designed for

family or company

Note

This is delicious. To obscenity, as we like to say). There are simply no other words.
If you do not have a special attachment, then just make a zrazy. It won't be worse. Highly recommend.

Well, this is such a festive option, or when there is a lot of time and you want to tinker. And for every day faster, of course, in razor.

Angela, thank you, dear! And I’m wondering how to use these strange things for my meat grinder. And that's what it turns out to be! Well, in general, you can stuff anything.
I will definitely try this recipe, it's just long for the weekend!
ang-kay
Svetlana, to health. I hope you enjoy these zrazy sausages.

Angela, Hello! I sit thinking how to replace couscous I never had it. Maybe you will advise. Or not worth taking until purchased. I have wanted to cook a kebbe for a long time, but somehow did not dare until I saw your wonderful recipe. Thank you for your work, for the wonderful photos and a detailed description of the entire cooking process!
ang-kay
Valyusha, thank you for such kind words.

how to replace couscous
I think that it is possible with bulgur or wheat, but they, these porridges, only need to be brought to readiness.

Angela, these are cute sausages. I did not use such a nozzle, and has it ever been to me and the kebba? We must try it, maybe with zrazami. It remains to buy couscous. Thank you Angela, everything is beautiful and delicious as always!

And I got stuck together when I tested this attachment. Therefore, I removed it. True, stuffing sausages through the Kenwood meat grinder did not work.
ang-kay
Olenka, Thank you. Of course, just do it. This is delicious.

Most likely, somehow the mince was not made correctly or pressed down when molded. Sometimes I get a couple of cobbled together, but I have them back and in a new way.
And with sausage attachments, the problem is when the minced meat is sticky. This I went through. Hard to fill, but possible. Therefore, I bought a syringe so as not to suffer)

So I did so, so as not to torture myself)

My MYSTERY meat grinder has a recipe for making a kebbe in the instructions. So there the filling consists of lamb, spices, onions + flour. A lean meat shell + spices + flour. Maybe delicious kebbe turns out, but there you need to drive the lamb 2 times through a meat grinder. With meat for the shell, you also need 3 times. It is too dreary and time-consuming, and the taste is not known what will turn out. I will do it your way!
ang-kay
valentine, and I have flour in the filling and I need to twist it 2 and 3 times. But everything is done quickly. And it's delicious. The meat is also lean
SvetaI
Angela, I will come to you with a tremendous thank you!
I did everything exactly according to your recipe and it turned out without problems! In general, I use this attachment for the first time, I was very worried, my pens do not grow out of the right place, and the first time they rarely work out, but everything turned out to be easy (only because you explained and showed in the photo what and how).
Girls and boys, this is VERY delicious! I don’t really like minced meat dishes, but this is something special.
After all, there are no spices at all, except for black pepper, and the taste is distinctly oriental. Either kebab or kebab, is that why it happened?
Only I have extra tubes left, maybe I need to add couscous to a smaller part, and not to a large one, as you say? In general, I almost halved the minced meat, the parts were not very different.
There was no time to invent the filling for the extra tubes, I had to crush them and make the cutlets, they also came out interesting - tender, tender.
In general, although it is a little confusing, I will definitely repeat it! There are already thoughts to make a filling from Mikha's chicken curds - it should turn out very nice and tasty.
Thanks again, Angela!
ang-kay
Svetochka, I'm very glad that you made up your mind and everything worked out) It's really very tasty. Nothing special, but the taste is amazing.

Svetlana, everything is correct. The big one. The shells come out more than the fillings.I have a couple of them left too. But not scary. I also fried it and that's it.

I will definitely repeat
Well, great)
