"Baku" salad

Ingredients

Eggplant 1 kg
Tomatoes, cucumbers, bell peppers at will
Red onion 1 PC
Garlic 2-3 cloves
Parsley, dill, cilantro, basil to make a big bunch
Lemon juice 3 tablespoons
Honey 2 tablespoons
Rast. aromatic oil 3 tablespoons
Grape or apple cider vinegar 2 tablespoons
Salt, ground pepper taste

Cooking method

  • First, wash the eggplants and cut them with your fingers.
  • Baku salad
  • Boil a liter of water, add 1 tbsp. a spoonful of salt and immerse the eggplants for 5-7 minutes. It's important not to digest
  • We put it in a colander and leave to cool.
  • Making a gas station. Cut the onion into half rings, crush the garlic with a knife, then chop.
  • Cut the greens. Mix, vegetable oil, lemon juice, honey, vinegar, salt and pepper.
  • Stir in herbs, onions and garlic.

  • Then add cooled eggplants to the dressing, mix and send to the refrigerator.
  • Ideal for 12 hours, but also for 6 hours. As I am not patient, then two hours in the refrigerator is enough for me.
  • While the eggplants are in the refrigerator, it is advisable to mix them there.
