Baked eggplant soup with sage

Ingredients

eggplant 500 g
celery root 50-100 g
carrot 1 PC
bulb onions 1 PC
sage leaves (bunch) ~ 20 g
water or vegetable broth 2 l
cream (optional) 200 ml
hard cheese ~ 50-100 g
pepper
salt
oil for frying

Cooking method

  • Wash the eggplants, dry with a napkin, then bake over an open fire or on a flame divider.
  • Cool, peel, chop the pulp.
  • Chop sage leaves.
  • Finely chop the onions.
  • Grate carrots and celery root.
  • I cooked soup in Steba's multicooker, so I first fried vegetables in the Fry program, turned off the program.
  • Then I added chopped eggplant pulp, chopped sage leaves, pepper and salt and covered with water.
  • I switched on the Vegetables program, pressure 0.7, time 5 minutes.
  • After readiness (do not forcibly release the pressure), pureed vegetables with a blender.
  • You can add cream (I did not add) to the finished soup and bring to a boil.
  • Serve the soup sprinkled with grated cheese.

Lyudochka, if there is no fresh sage, then you can use dry sage, but with a fresh taste it is definitely brighter.
