Cooking method

  • First, let's make the meat pickle.
  • For 2 liters of water, 6 tablespoons of salt without a slide, a tablespoon of a mixture of peppers, you can add a teaspoon of dried garlic.
  • We take the carcass, divide it into 8 large pieces and put it in a saucepan with brine. Let it swim for three or four hours. after the time has elapsed, drain the water, and wash the meat once under running cold water. We return our pieces to a saucepan and pour sour cream, 300-400 gr.
  • Chop the cabbage, add the grated carrots, cut one onion and tomatoes. We salt it very lightly, because the cabbage will be saturated with rabbit juice, and we have it quite salty. Fill the cabbage with oil and put it on the bottom of a deep mold or baking sheet.

  • and cover the form with foil. 170 degrees with convection 2:30 hours. (maybe two hours, but it's juicier for me)
  • We take out the form and turn on the oven at 230 degrees.
  • We remove the foil, take the second portion of sour cream and generously coat our finished hare and cabbage in the intervals between the pieces.
  • Break the loaf into large pieces and put knives for chopping meat into the bowl of the combine with a nozzle. Throw in a decent bunch of parsley, garlic and pour 4-5 tablespoons of olive oil there. First, the pulsation mode, then grind to a crumb state. (lovers of spicy can throw fresh chili pepper into the bowl),
  • Sprinkle generously with breadcrumbs over the entire surface

With your recipe, I now know for sure: I love rabbits and even very much! I liked the subtleties in the recipe: soaking meat, an abundance of sour cream and, of course, crispy croutons (before that I met recipes with such a sprinkle, but passed by), all together makes the dish very harmonious, the meat turns out to be tender, all the bones are separated by themselves, cabbage and vegetables soaked in juice. Very, very tasty! I added apples, sun-dried tomatoes, sun-dried plums to vegetables.
