Ingredients

medium potatoes 4-5 pieces
small white cabbage 1/2 fork
small beets 1 piece
medium carrots 1 piece
turnip onion large 1 piece
eggplant small young 1 piece
medium tomato (tomato juice) 3-4 pieces (250 ml)
bell pepper big sweet 1 piece
tomato paste 1 tbsp. the spoon
smoked plums (can be dried or dry) 10-12 pieces
garlic 1-2 teeth
vegetable oil 100-150 grams
bitter pepper taste
salt to taste (1 tablespoon)
sugar to taste (1 tablespoon)
Bay leaf 1-2 sheets
sweet peas 3-4 pieces
water (vegetable broth) 2-2.5 liters
greens (I have parsley) large bundle

Cooking method

... The sweetness doesn't get in the way. Almost all of it goes into the dish, but the plum also remains not sour, but pleasant.
I always cook lean borscht, my husband does not recognize others. But you can easily cook such borscht in meat broth by adding smoked brisket. Then a slight hint of "haze" will appear even more. Eggplants in it are very harmoniously combined with other vegetables we are used to. Recommend!
