Cooking method

  • We start with barley, or whoever wants rice, take 100 ml of cereal, pick it up, wash it, cook until tender - soft, leave to cool.
  • While the cereal is boiling, peel the peppers and zucchini, removing the core. I have young zucchini, so I do not peel the skin, but the cut core, there are practically no seeds in it, I rub it on a coarse grater and set it aside for now. From zucchini I got 5 parts, from 6 to 8 cm long, for stuffing
  • Since I have my own carrots, I just carefully, with a brush, bought it is certainly better to honor it. We grate the carrots on a coarse grater.
  • We take out the minced meat from the refrigerator, add grated carrots and zucchini core, boiled pearl barley, salt 1 tsp. salt, I salted with "gremolate" salt

In order to interrupt the smack that I don't like, but at the same time not completely hamper the taste of the bird, I added 0.5 tsp. marjoram and 0.5 tsp. thyme.
  • We stuff the peppers with minced meat. So that minced meat does not fall out of pieces of zucchini without bottoms, I first put them on the bottom of the pan, like barrels without a bottom, and then I put the minced meat in them right in the pan, on top and in the intervals between the zucchini I put peppers and zucchini "butts". Pour water into a saucepan so that it covers the zucchini at the bottom completely, while the peppers and "butts" of the zucchini will be steamed. Pour the remaining 300 ml of sour cream on top.
  • We put to stew: we bring the pan to a boil, then we reduce the power to a minimum and cook under the lid for about 20 minutes. I added a couple of leaves of lavrushka 5 minutes before the end.

And yet, in our family, pearl barley is very popular, in my opinion it is undeservedly rarely used in modern cooking. But before, before rice appeared in every family, barley was a very popular cereal! And the name, just think: pearl barley - from the word "pearl", which means "pearl", that is, pearl barley is pearl cereal! So I very often replace rice with barley, well, except for pilaf, of course ...In addition, barley contains much more nutrients than rice, and barley has a lower glycemic index than rice.
