Pickled tomatoes in their own juice with aromatic herbs

Ingredients

Tomatoes are small or medium strong for 4 liter cans
Non-standard tomatoes (crumpled, cracked) 3 kg.
salt 2-3 st. l.
sugar 5 tbsp. l.
dried basil 0.5-0.7 tsp
dried oregano 0.5-0.7 tsp
cloves (inflorescences) 4 things
vegetable oil (olive) 4 tbsp. l.

Cooking method

  • Quite a simple set and a delicious result. It was invented and tested last year, at a temperature of about 10C, tomatoes are stored wonderfully, I have not tried it in room conditions.
  • So let's get started.
  • We put tightly washed tomatoes in washed liter jars, intended for seaming. Boil about 2 liters of water and pour boiling water over the tomatoes, cover the jars with lids.
  • The whole non-standard (I have it with cracks, and yellow and even green from accidentally touched branches) is also thoroughly washed and passed through a juicer, the juice output is about 3.5 liters, depending on the juiciness of the tomato. We put our juice to boil for about 15-20 minutes, add salt and sugar, dried basil and oregano.
  • We drain the water from the cans, pour 1 tbsp into the cans. l. odorless vegetable oil or olive oil, throw in 1 clove each, fill with boiling juice and immediately roll up the jars. Turn them over onto lids and wrap them until they cool completely. And on a winter evening, open the jar and enjoy.
  • Bon Appetit!

Hope, there is enough acid in the tomatoes themselves, you can, of course, add vinegar, but for me this is already extra vegetable oil here to soften the taste, and salt-sugar is enough for good storage of tomatoes .. but, I repeat, I did not store it in room conditions - only in basement

Last year I made similar tomatoes - everything took off, although according to the old recipe I close the tomatoes without vinegar - they stand, but I did it once in the tomato filling - they failed.

prona, I did similar ones last year. I added vinegar for insurance - they stand in the room all year round (from 21 to 30 degrees). but some were left without vinegar. I just forgot to top up. They cost themselves as pretty.
All jars with screw caps. Now I only buy these, in different calibers. While there are no cookies, I store pistachios and so on there.
