Whole Grain Pitas

Ingredients

Whole grain wheat flour 200g
Wheat flour, premium 300g
Fresh yeast 15g
Salt 6g
Olive oil 30g
Water 270 ml

Cooking method

  • Sift flour, mix with salt.
  • Dissolve yeast in warm water, add olive oil. Combine everything and knead the dough. Put the dough in a bowl, cover with plastic wrap and leave to rise in a warm place for 1-1.5 hours. The dough should double in size.
  • Divide the fermented dough into 9 parts. First, spread each lump well with your palm into a cake. Then collect the edges of the cake to the center, round and roll into a ball. Allow to rest, covered with foil, for 10 minutes.
  • Roll each ball of dough on a table dusted with flour into a thin pancake, 0.5-0.6 cm thick.
  • Place on a baking sheet and cover with a proofing towel for 30 minutes.
  • Bake in the oven at 250 degrees until tender.
  • The pits should be very swollen and reddened.
  • Place the finished pitas in a large saucepan under the lid to steam slightly and soften.

Note

It is very interesting to watch the pits inflate through the oven window.
It is very convenient to put a salad or a piece of meat or sausages with a tomato, a cucumber in the pocket of such a bun ... and anything you like and take it with you for a snack
