300gr. grind walnuts twice in a meat grinder. Add 1 small head of crushed garlic, dry hot red pepper to taste and 1 tbsp. l without top of Imeretian saffron, 1 tbsp of water. Mix everything very thoroughly, trying to squeeze the oil out of the nut. Then add 1 st. l without top ground coriander and 1 tsp fenugreek and salt. Dilute everything with cold boiled water until the consistency of liquid sour cream. Can be served separately in a gravy boat. Or you can make it a little thinner and put fried or boiled chicken, fish, fried eggplant or cauliflower in the sauce. The same sauce can be made from mayonnaise. Do not put vinegar in peanut sauce.

Gayane Atabekova, Gayane! Somehow I found this recipe of yours. This recipe is not in your profile, nor is there a kupat recipe in your profile, a recipe for tkemali sauce. This is just what I was able to find. There may be many more of your recipes scattered across different topics. It seems to me that you should definitely post all these recipes in your profile. We have very few recipes from the inhabitants of the Caucasus on our forum, and the Caucasian cuisine is so awesomely delicious! And this recipe, in particular, I would like to know in more detail. In what cases mayonnaise is added, and in what cases water! How much mayonnaise? Surely more questions will arise in the cooking process. I hope to see all these and many other recipes in your profile, otherwise they will simply get lost on different topics and will not reach users.

Masha Ivanova, Lena, if you make from a nut, then add only boiled water. And if from mayonnaise, then put the same spices and also dilute with boiled cold water. These are two different sauces. One nut, the other mayonnaise. It's just that the set of spices is the same. And the recipes were lost because there were no photos. But now I've learned to upload photos and I'm writing again, but I'm terribly afraid that I will get caught for it. There was a photo of Kupaty, but it disappeared. Now when I do, I'll post it in new recipes. Kupaty was in the subject of homemade sausage. I unknowingly put the recipe of tkemali in someone else's topic, so they scolded me so. Until now, as I remember, I shudder. Now I will gradually add recipes from the photo.
