  • Gyuvech is a generalized name for traditional dishes from Moldovan, Bulgarian and Romanian cuisine. Gyuvech is most often prepared with meat, but there is also a vegetarian vegetable option. The classic güvech is cooked in clay pots in the oven or in the oven, but it can also be cooked in thick-walled pots on the gas hob. I propose a recipe for cooking this dish in a slow cooker. For twenty years now this dish has been a success in our family. The ratio of vegetable components can be any, but corn, in my opinion, must be present in this dish.
  • To prepare this dish, I took a small amount of products, which is explained by the small volume of the multicooker bowl.
  • Chop red peppers and onions, place in a multicooker bowl, add a little vegetable oil, 2-3 tablespoons of water. Set the "Stew. Soup" program for 30 minutes. Simmer for 10 minutes, covered.
  • In a multicooker bowl, put diced eggplant, zucchini, tomato, grated carrots on a medium grater, add vegetable oil. Simmer for 20 minutes with the lid closed.
  • Add canned corn to the multicooker bowl. Add salt, Four Peppers mix, a little sugar. Stir the mixture. Focus not on the taste of vegetables for salt and sugar, but on the taste of vegetable broth (vegetables will soon absorb some of the salt), the broth should be slightly salty. Put 1 pea of ​​allspice, two cloves, some cinnamon, a tiny bay leaf. Stir, taste for salt and spices, add another ingredient if necessary. Simmer for 10 minutes with the lid closed.
  • Add garlic crushed in a press, 0.5 teaspoon of vinegar (more if desired). Try for the salt and spice content, add another component if necessary. Disable the "Stew. Soup" program. Cook for another 10-15 minutes on the Auto Warm program.
  • Let the dish brew for another 5-10 minutes.
  • Gyuvech prepared according to this recipe should contain a small amount of vegetable broth, no need to cook the dish "until dry". Vegetables should not be "softened", they should be "crunchy" (but you can stew for longer if desired). Gyuvech can be served both hot and cold (I personally like the cold version even more). You can serve it as an independent dish or as a side dish for meat (I like it more as an independent dish).

Note

It is recommended to add green peas to this version of Gyuvech, but for some reason I do not like it, so I do not add. You should not put parsley and dill in this dish, otherwise their taste and smell will overpower the taste and smell of vegetables and spices.
Many of my friends tried to cook this dish and could not understand why it tasted "somehow different", but the whole point is in the content of cinnamon and cloves, they give this dish a unique taste and aroma.
It is better to put fresh tomatoes instead of ketchup (tomato paste) in this version of gyuvech.
Once I didn't have corn, so I had to cook gyuvech without it. Believe me, this dish is very poor in taste.
On the forum, I did not find recipes for vegetable gyuvech (sometimes it is also called roast vegetables), there are similar options, but they differ from this recipe both in the composition of the products and in the cooking technology. If I have not seen something, please excuse me.
