Ingredients

White beans (large) 200 gr.
Carrot 1 PC.
Sweet pepper 1 PC.
fresh tomato 1 PC.
tomato paste 1 tbsp. l.
bulb onions 1 PC.
olive oil 1-2 tbsp. l.
ground black pepper 0.5 tsp
salt taste
parsley, basil, celery taste
lemon juice 1 tbsp. l.

Cooking method

  • In Greece and Cyprus, a very tasty thick bean soup is often prepared, which is called φασολάδα (Ava beans or Ada beans).
  • There are several recipes for beans, I am sharing one of them with you.
  • Soak the beans overnight in boiled water at room temperature. In the morning we drain the water and put the beans in boiling water (about 1 liter). When the beans begin to soften (I usually have about an hour), add carrots, cut into slices or semicircles and sweet peppers, cut into small pieces.
  • Cook vegetables under a lid over low heat for another 5 minutes, water should cover all vegetables, if not enough, add water. Fry the onion in a tablespoon of oil until transparent, chop the tomato in a blender.
  • Add onion, tomato puree and tomato paste to vegetables. Simmer the beans until the beans and vegetables are cooked. Salt and pepper to taste.
  • Serve the beans with fresh chopped herbs, pouring a drop of olive oil and lemon juice.
