Cooking method

  • Often the main problem for preparing salami is the lack of a shell and a sausage syringe or attachment for a meat grinder. I decided to do without the above this time. Remained minced meat from sausages, the recipe for which I will post later.
  • The minced meat was hand-mixed for 15 minutes (until the white threads appeared). I make a cutlet, put it on parchment paper and wrap it in candy. If necessary, I pierce the shell in order to remove excess air.

  • A month passed ... before that I gave a salami recipe in which I dried sausage for 4 weeks on the refrigerator door. Tellingly, it all depends on the refrigerator and the season. In general, you should always control the level of drying.
  • So, a month has passed during which the sausage dried on the refrigerator door and now it is salami. White mold is normal, but if there is another mold, the one who has eaten the sausage will turn white.
