Ingredients

Fatty meat 500-600 g
Bulb onions 300 g
Carrot 350-400 g
Tomatoes (optional) 250-300 g
Mash 250 g
Rice (I have - Kuban) 250 g
Fresh garlic 1-2 heads
Zira coarse 1h l. from the hills.
Ground coriander 0.5 tsp
Coarse pepper mix pinch
Paprika 1 tsp
Salt taste
Rast. oil (mine is cottonseed) 100 ml.
Cold water 1 liter

Cooking method

  • MashkichirI - pilaf from mung bean and rice. Preparing is simple and straightforward. But properly prepared, this dish is not a shame to serve to guests.
  • For those who do not know what mash is, I will show you: Mashkichiri
  • So, I cut the meat off the beef ribs. It is fat, so I did not use my favorite dumba (fat tail fat) in this mashkichiri. But in lean meat I definitely add 50-60 grams of fat tail, cut into 2-3 cm pieces. This amount of dumba goes for 500-600 g of lean meat.
  • Beef is most often tough, unless, of course, it is a tenderloin, neck or sirloin edge. So, if the meat requires a long cooking, you must first stew it in your own juice. If pork is used, it can be fried immediately.
  • We cut the meat into medium pieces, put it in a cold cauldron, into which oil is already poured,
  • Mashkichiri
  • cover the cauldron with a lid and turn on the fire. Simmer over medium heat for 40 minutes. In the process, you can add a little water if the meat has little of its juice.
  • After a lapse of time, open the cauldron, add the fire to the maximum, evaporate the remaining moisture and fry the meat. When it is browned, add a good pinch of freshly ground pepper.
  • Mashkichiri
  • Stir, wipe the saliva from the aroma of fried meat with pepper, and put onions cut into large half rings or feathers into the cauldron. The onions will be fried pretty quickly, because the cauldron is already decently hot. As soon as the onion is golden, add the carrots, cut into strips (like for pilaf). Carrots do not need to be fried too much, let them just soften a little, and they will have time to fry in some places.
  • Mashkichiri
  • Now, if you wish, you can add tomatoes (this is not necessary at all, I just wanted sour), cut into large cubes. I do not take off the skin, it always disappears somewhere by itself.
  • Mashkichiri
  • We do not diminish the fire, therefore, the liquid will quickly evaporate from the tomatoes.
  • Now we fill the whole thing with a liter of cold water. Why cold? Because if boiling water is poured into a red-hot cauldron, it will boil too violently and the zirvak will become cloudy or even a little whitish.
  • So, while this whole thing is boiling, add a large pinch of salt, cumin, coriander and paprika. And also quickly remove the toughest husks from the heads of garlic, and rinse the mung bean. Now let's add them to the cauldron and, letting it boil, time it. Cover with a lid and cook at a moderate boil for 20 minutes. A few minutes before the end of the time, rinse the rice.

  • Now take out the garlic and add salt the zirvak so that it becomes slightly salty. Throw in the rice, stir, and again increase the heat as much as possible. We do not close the lid, but wait for the rice and mung bean to absorb all the zirvak.

  • As soon as the liquid leaves the surface, we begin to check: we move our future mashkichiri away from the cauldron wall with a slotted spoon and see if there is still liquid there. If there is, we return everything to its place and wait further. We make sure that it does not burn. If something like this is planned, it is better to turn down the fire. When there is no liquid left in the cauldron, we collect everything up a hill, return the garlic to the cauldron, (by the way, if there is a little liquid around the pea, but no more than in my photo, then it's okay, don't evaporate it, mashkichiri allows you not to mess with this)
  • Mashkichiri
  • cover with a lid and make such a tiny light so that it does not even burn, but barely warms up. And leave to languish for 15 minutes.
  • Then turn off the fire, open the lid and mix gently, or rather, do not mix, but turn the mashkichiri in parts with a slotted spoon so that the upper cereal goes all down.
  • It will not look very impressive at first:

  • But we are not afraid. We close the cauldron and leave it alone for 30-40 minutes, do not even come up to it, it has already seen enough of you, so let it rest now.
  • During this time, the contents of the cauldron, as they say in our Bread Maker, will ripen. And this is the most correct word, in my opinion. The grains will pick up, crumple, absorb the remaining moisture and level out. And they will appear before you in all their glory, as in a parade - rice to rice, machine to machine.

  • Yes, I almost forgot! You've probably already noticed that I do not throw chilli peppers into the zirvak. I'm afraid, you know ... it was a bad practice - you could only eat what you got in an embrace with a fire extinguisher.
  • Therefore, I highly recommend simply cutting a pepper pod into thin rings and decorating the finished dish with it. Believe me, getting on the tooth, this pepper only burns pleasantly, nothing more. But it goes very well with this dish. Recommend.
