Easter cake with cottage cheese in a Maxwell 3752 bread maker

Ingredients

Wheat flour of the highest grade 255 g
Baked milk 40 g
Yolks 2 pcs
Soft, fat-free cottage cheese 75 g
Dry yeast, Dr. Etker 1.25 tsp
Butter, softened 45 g
Brown sugar, fine 50 g
Vanilla Sugar, Dr. Etker, 8 g
Salt 0.25 tsp
Lemon zest, finely grated 1 tsp
Candied papaya and pineapple 75 g
Flour for sprinkling candied fruits 2 tbsp. l.

Cooking method

  • Pour candied fruits with boiling water, drain the water after 10 minutes, dry the candied fruits with a paper towel, roll in flour and set aside for a while.
  • In a small bowl, combine yolks, milk and a pinch of salt.
  • Pour this mixture into a bucket of a bread machine, add butter and cottage cheese there (I used soft cottage cheese 0.1% * house in the village * in a package of 250 g).
  • Sift flour into a large bowl, add yeast, sugar, vanilla sugar and zest.
  • Stir and place on top of the liquid mixture in a bucket of a bread machine.
  • Mode 5. SOFT BREAD, crust color LIGHT.
  • Time 2 hours 25 minutes.
  • During the first kneading, you should get a dough bun. I helped the bread maker a little, using a silicone spatula to remove the flour from the corners.
  • After that, I closed the window of the bread machine with foil and intervened in its work only 3 times.
  • 2 hours 15 minutes, added candied fruit at a signal,
  • 1 hour 55 minutes - took out the dough mixer from the bucket,
  • 1 hour 05 minutes, - smeared the top crust of the cake with milk.
  • At the end of the mode, I took out the cake and put it ON SIDE on the grate covered with a towel and turned it over from side to side a couple of times while it cooled down.
