Pancakes Tender with buttermilk

Ingredients

Buttermilk 500 grams + 100 grams
Wheat flour 200 grams
Chicken egg 2 pcs.
Sugar 1-2 tbsp. l.
Salt 0.5 tsp
Baking powder 1 tsp
Vegetable oil 2-3 tbsp. l.

Cooking method

  • Sift the flour with baking powder.
  • Just weigh the buttermilk. According to the recipe, 500 grams, but I got used to the thinner dough, so after aging I added another 100 grams.
  • Mix buttermilk with eggs, sugar and salt. Without fanaticism. If you mix with a mixer, then not for long and at low speed.
  • Add flour sifted with baking powder to the mixture and mix thoroughly so that there are no lumps.
  • Leave the dough to rest for 20 minutes. Then stir in vegetable oil into the dough. This is where the dough seemed thick to me. Just add another 100 grams of buttermilk with a spoon.
  • Bake the pancakes in a well-heated skillet over medium heat. The pan can be greased with oil. But I don't have a pancake pan. I baked it on a Brand 351 pancake maker, gently stretching the dough with a wet stick to a diameter of 18 cm. The dough practically does not stretch along the surface of the pancake maker, therefore it is better to bake these pancakes in a pan using the bulk method.
  • The pancakes are very tender and soft. I didn't oil them. Fold in four at once.
