Hazelnut Frantz (lean)

Ingredients

Dough:
dry yeast 3 g
wheat flour c. from. 250-270 g
sparkling mineral water 150 g
salt 3.5 g
sugar 50 g
odorless vegetable oil 40 g
vanilla 0.5 g
Filling:
wheat flour c. from. 30 g
boiling water 130 g
sugar 90 g
nuts 100 g
odorless vegetable oil 25 g

Cooking method

  • Dough:
  • Mix yeast and 230 grams of flour. Add sugar, vanilla and mineral water (table, not salted).
  • Knead for 7-8 minutes and leave alone for 20-25 minutes for autolysis.
  • Add remaining flour, salt and oil. Knead a soft, non-sticky dough.
  • Leave to ferment for an hour and a half. In the middle of fermentation, knead the dough once.
  • Filling:
  • Pour boiling water over the flour. Stir so that there are no lumps.
  • Place the nuts (walnuts, hazelnuts, almonds or pistachios) in a blender bowl and grind them together with sugar into small crumbs. Add oil, stir.
  • Combine with flour brew.
  • Hazelnut Frantz (lean)
  • Forming and baking:
  • Dust the table with flour. Lay out the dough, knead, roll into a layer 5 mm thick. Grease with nut filling.
  • Roll up on the long side. Using a sharp knife, cut the roll into two parts lengthwise, not reaching from one side about two centimeters to the end of the roll.
  • Expand both parts of the roll with the slices up and intertwine with each other.
  • Place in a mold (23x12 cm) covered with baking paper.
  • Cover loosely with plastic wrap. Proofing - one hour.
  • Bake in an oven preheated to 220C (convection 200C) degrees with steam for the first 7-8 minutes, then lower the temperature to 190C (convection 170C) degrees and bring to readiness. The surface of the finished fender will be golden, the skewer will come out dry.
  • Leave the fenders in the pan for 10 minutes, then remove and cool completely on a wire rack.
