Ingredients

Flour 250 g
Sugar 120 g
Butter 25 g
Eggs 2 pcs.
Baking powder 1 tsp
Salt pinch
Vanilla or vanilla sugar
Nuts, seeds, raisins 200 g
Honey 1 tbsp. l.

Cooking method

  • Cantuccini
  • 1. Sift flour into a deep bowl, add baking powder, sugar, vanilla, salt. The products are quite sweet. Adjust to your taste.
  • 2. Melt the butter (but do not boil).
  • 3. Add butter, honey to dry ingredients, beat in eggs (you don't need to beat eggs first).
  • 4. Add seeds, nuts (do not grind the nuts too much). I had walnuts and pumpkin seeds.
  • 5. Rinse and dry the raisins (no need to soak).
  • 6. Knead a firm but plastic dough. Leave in the refrigerator for 30 minutes.
  • 7. Preheat the oven to 180 * C
  • 8. Form 5-6 bars from the dough about 25 cm long and 3-4 cm in diameter.
  • 9. Place the bars on the parchment at a distance (they will blur a little when baking).
  • 10. Bake for 15-20 minutes. The items should be browned, but not darkened too much. Then take out the bars and while still warm (even hot) cut them obliquely with a sharp knife into pieces 1-1.5 cm thick.
  • 11. Put the pieces back and bake / dry for another 10 minutes at a temperature of 150 * C with convection.
  • 12. Cool the finished katuccini and put in a glass or tin container.

The dish is designed for

40-45 pcs.

Note

Katuccini, when cooled down, is quite hard. And that's how they should be. According to Italian tradition, they are served with coffee on a saucer next to sugar. The crouton must be soaked in coffee. A delicious crunch with your morning coffee.

Try it, girls, to your health! They are not as crumbly as bread crumbs. The katuccini are denser and harder. But that's their beauty. And therefore, they must be made with small sausages in diameter. So they are baked better and faster and such portions are obtained. Even guests are not ashamed to serve. In addition, the dough here serves as a fastening component, and the main part is nuts, seeds and dried fruits. The more there are, the more delicious, as for me. ... There were recipes with cinnamon or zest. I haven’t tried it, I don’t know ... maybe it’s also delicious, but that’s another story.
