Yoghurt cupcake Delicate pastel

Ingredients

Eggs 3 pcs.
Flour 200 gr.
Sugar 200gr.
Vanilla sugar 2 tsp
Natural yogurt (I have homemade) 150 gr.
Baking powder 2 tsp
Vegetable oil 100 ml.
Lemon zest one lemon
Lemon juice half a lemon
Currant kissel 1 package weighing 90 gr.

Cooking method

  • Girls, today we have a cupcake. My very, most beloved and very reliable, like a loyal friend: I helped out more than once and never let me down.
  • Turn on the oven at 160 degrees.
  • Preparing a cake pan: I have a silicone one and I lightly grease it with vegetable oil. I don't sprinkle it with flour.
  • We divide the eggs into whites and yolks.
  • Beat the egg whites with a pinch of salt until they reach strong peaks and set aside.
  • In another container, beat the egg yolks with sugar and vanilla sugar until whitening and increase in volume.
  • Add lemon juice, zest, vegetable oil (in this case, I prefer corn oil), yogurt and beat a little more, just a little, just to mix well.
  • Add baking powder to the measured flour and, sifting, add to the dough. Mix well.
  • After that, add the whipped proteins in two steps: first, one third, gently, neatly but decisively mixed by folding, and then the rest of the proteins - all the same gently, but all the time demonstrating the seriousness of our intentions to the future cake.
  • Next, pour half of the dough into the prepared form, which pleases the eye with a delicate light yellow color of a pastel shade.
  • In the remaining half of the dough, pour out of the bag and carefully mix in the jelly powder. In the original recipe, girls, it was a bag of raspberry pudding, so if you can find it, know that you are on the right track and don't miss the opportunity to bake a cupcake with it. But we only have vanilla or chocolate pudding on sale, I have never met a colored one, but I really wanted to bake a cake. It is clear that the need for inventions is tricky, and my stubbornness was always enough for ten, so one fine winter day the idea came to me to replace the pudding with jelly. I did so, and I think I was right. This part of the dough, which becomes just a shamelessly delicate pink of a pastel shade, is carefully poured on top of the yellow one.
  • We put the dish in a preheated oven and bake for about an hour (of course, depending on the characteristics of your oven). I bake this cake for 1 hour 10 minutes. We check the readiness with a wooden stick.
  • Then cool the cake a little right in the form, carefully remove it from it and let it cool completely already on the wire rack.
  • Next, we decorate as desired, opportunities and mood. The easiest option: 100 gr. We mix powdered sugar with a tablespoon of lemon juice until a thick (or not very - well, as you like) fondant (or icing) is present and distribute this fondant over the top of the cake, making drips. With lemon frosting, your cupcake can look like this (or, of course, much better)
