Ingredients

not fatty pork 1 kg
nitrite salt (you can also use the usual one, but add 20 ml of ascorbic acid, purchased in ampoules, in the pharmacy, to preserve the color) 18 g
Sahara 2 g
chopped garlic 30 g
black pepper 2 g
gelatin 10 g
all the rest taste

Cooking method

  • I cut the meat into pieces of 2-3 cm, add spices, using a sausage syringe (you can use the top part from a plastic, 2-liter bottle) I stuff a callogen casing, caliber 65mm.
  • I tie it with twine and send it to the refrigerator for 2 days.
  • I put a large pot of water and at 80C "simmer" the ham until the inside of the bars is 70C.
  • Then I cool it down and refrigerate for 12 hours.
  • It's a pity that I can't show the photo, because I'm a beginner

Exactly! If I use ordinary salt, then with ascorbic acid, but if I use nitrite, then I don't add acid. Well, on the account of the taste, I like it sharper and for myself I add more pepper, sometimes I add dried red sweet pepper "petals"
