Ingredients

water or broth 2000 ml
dry beans 150 g
carrot 50 gr.
bulb onions 70 gr.
fresh porcini mushrooms / dried 200/20 gr.
potatoes 200 gr.
sunflower oil 20 gr.
homemade thick tomato juice 200 ml
garlic 1 clove (5 g)
parsley and / or dill 30 gr.
salt, spices taste

Cooking method

  • Do not be surprised at such an exact weight of each product, because the goal was to accurately count calories for the corresponding topic of our forum.
  • Rinse beans and soak in water for 5-6 hours or overnight.
  • Boil the beans until almost cooked and drain the broth. I boiled in a cartoon on the program Legumes.
  • In oil, first simmer the chopped onion with garlic, then add chopped mushrooms to it, then grated carrots.

  • If your mushrooms are dry (like mine), then soak them first and boil for 10-15 minutes.

Nice soup. I cooked it with oyster mushrooms, but with dry mushrooms, I think it would be even tastier. Instead of garlic, I put a lot of jusai. Tomato juice gave such a pleasant sourness. You can have more mushrooms and potatoes, beans can be ready-made from a jar, you can serve with sour cream.
