Armenian adjika

Ingredients

peeled garlic 350 g
hot red pepper (with the tail already cut off) 500 g
peeled walnut 350 g
parsley 2 large bundles
cilantro 2 large bundles
salt a little taste
and LYUBOFFFF)))

Cooking method

  • The recipe is outrageously simple))) Garlic, hot red pepper (only the tail is cut off, we leave everything else), twist the walnut in a meat grinder. Chop cilantro and parsley in what or in what. I was grinding in a mechanical mini-grinder Tupperovsky. Slightly add salt to taste. And without it, it is perfectly stored because of hot pepper))) We mix everything, let it stand for an hour on the table in the kitchen and put it in jars. I store it in the refrigerator. The thing is super !!! I use it when marinating meat, in roasts, in frying for soups and other dishes. To barbecue and grilled meat ... VESCHSCHSCH !!! Just with potatoes. BUT!!! very careful! Very sharp! But it is spent sparingly))) You need just a little.

Note

Since autumn I wanted to lay out the recipe, but I forgot everything. I remember only when I take up the jar, but at this time I cook, and then I forget safely. But now I have improved

Helen
This is it, Yeah !!!
Mila1
Helen3097, Helen, try it in the new season. Suddenly you will like it. And the peasants are very respected
Rada-dms
Thanks for the recipe I need!
please
I was only looking for adjika with nuts, but coriander seeds are needed everywhere, I won't find this with us now)) thanks!
Mila1
Rada-dms, please, girls, very happy. that the recipe suits you
Olga
Lyudmila, I confirm that the recipe is very good. You can, I'll make the only addition. With red pepper, you need to work with gloves. Because you can get burned. 20 years ago, it happened to me, I did not sleep all night, kept my hands in cold water. But adjika is a bomb !!! delicious.
Mila1
Olga, Olga, what is this recipe good for, I didn't need gloves. I washed it whole under the tap, and then cut off all the tails on the board, that is, I didn't touch the insides. Well, the meat grinder will endure everything But thanks for such a useful addition, thanks. You never know how the girls will start to clean the pepper. Caution first of all

Or add a little to sour cream / mayonnaise (who eats with what) and spread dumplings. Oh, so sincere!

oops. I also have bell peppers in my recipe, and instead of fresh herbs - a bag of hops-suneli.

Yes sir! Need to try this with dumplings
I have no doubt. that there are a great many variations of this recipe and they are all insanely delicious. I brought the recipe by which I am making

Mila1, Lyudochka, and where were you in the fall with the recipe ?! Okay, I'll have to plant a walnut ... I'll rewrite it in my "grimoire" for the next season today. We don't eat much spicy food, but to add a thread or guests (we have such Georgian Greeks) to pamper - that's the thing!
Mila1
paramed1, Veronichka, here I scold myself with the last words that I eat, and no one has this miracle. But in the fall I had both banks and granddaughter in my arms practically, there was still a little girl, now she is already running, really something tells me that I can't do anything at all, I'll chase after her
I also eat little spicy food, but when I coat the meat with it for pickling, then what I need is obtained. And not very spicy and aromatic.
paramed1
People, what our years are with you! We will have time to do everything - to do adjika and run after grandchildren! I sit and write a recipe.I will definitely coat the meat for drying, there will be a bomb!
Elena Tim
Oh, what an adzhichka! I drag it to bookmarks, I will try. I have never eaten anything like this.
Lyudochka, thanks! For me, such adjika is something new!
Mila1
Elena Tim, Helen, I'll be glad. if you like
Ivanovna5
I, too, have never made such adjika, but the recipe is very interesting and seemingly very appetizing, I take it in my piggy bank.
Olechka.s
Lyudmila, an interesting adjika. Need to try. Thanks for the recipe!
Elena_Kamch
Mila1, Ludmila, I also dragged into the bookmarks An interesting option!
Fresh hot peppers just can't be found here ...
Mila1
Ivanovna5, Olechka.s, Elena_Kamch, girls, I'm very glad that I liked the recipe. Do it for health. Maybe your recipe will take root. And the fact that NOW there are not enough ingredients, then a new harvest is not far off.
Elena_Kamch
Nah ... I found a fresh hot pepper today (I don't know, really, whose ...) for 1300 rubles kg! I bought some for kimchi, I can't live without it ... And so ... if on a large scale, then I'd better wait for the new harvest

Quite right, we will wait for a new harvest
Gaby
Mila, what a wonderful little thing this Armenian adjika is. Thanks for sharing the recipe. As there will be plenty of pepper on the market, you will have to remember and do this miracle.
Mila1
Gaby, Vika, thank you very much. that drew attention to the recipe. Make sure you won't regret it
solmazalla
And who knows, in our middle lane when it is more profitable to buy a hot pepper? And then last year I pickled a tomato, it was expensive. And I want this adzhichka
Mila1
solmazalla, Allochka, last year I made 2 servings. This is quite a lot. And I gave the children a jar each and my mother, and it’s still in the fridge. Because it’s sharp enough and the consumption is not very large. So I think 1kg will not be expensive enough. You first try to make one portion and then decide how much you need
solmazalla
Mila1, I will make 1 serving. I brought a jar of similar adjika from the south, it ended quickly, but there was no recipe, it was so tasty, ooo ...
Mila1
solmazalla, Allochka, it is not desirable for me. so I use it a little.Young people use it more
Elena_Kamch
Mila1, Luda, and how long can this adjichka be stored?
Mila1
Elena_Kamch, Helen, I have it in the fridge since last year. Wonderful
Oktyabrinka
Mila1, Lyudochka, thank you so much for the recipe. I made this year almost according to the recipe (I cleared some of the peppercorns from seeds, otherwise by the spring the adjika was infused and it just became thermonuclear, but very economically). very tasty to cook with it and well kept.
