Turkey sausage with mushrooms (Tescoma ham)

Ingredients

Turkey meat (breast and fillet with legs 50:50) 1 kg
Fresh champignons 200 gr.
Fat* 100 g
Dry garlic 1 tsp
Bay leaf 1 PC.
Ground white and black pepper 0.5 tsp.
Ground ginger 1 tsp
Nitrite salt 18 gr.

Cooking method

  • A sausage for turkey lovers!
  • Turkey meat (700 gr) and bacon pass through a meat grinder. Cut 300 g of breast fillet into pieces with a side of 0.5 cm.
  • Peel the mushrooms, cut into 2-4 pieces, depending on the size, and boil for 10 minutes after boiling in water with bay leaves.
  • Then put the mushrooms in a colander, cool and cut into small pieces.
  • Combine minced meat, pieces of turkey fillet, mushrooms and spices.
  • Knead the minced meat thoroughly until the characteristic white meaty threads are formed.
  • Stuff Teskom's ham with minced meat, tamping the minced meat. (How to fit more than 1 kg of minced meat into a ham can be read here.
  • Leave the sausage to ripen in the refrigerator for a day.
  • Before cooking, heat the ham with minced meat to room temperature for 1-2 hours.
  • I bake the sausage in the oven **:
  • first hour at 50 * С
  • second hour at 75 * С
  • the third and fourth - at 85 * C and until the temperature inside the loaf reaches 66 * C.
  • Cool the ham maker under cold water (ice can be used) and refrigerate for 8-10 hours.
