  • For dough in a glass container, I mix flour with yeast, add water, mix thoroughly with a spoon, cover with foil and leave in the refrigerator for 12-15 hours.

  • To facilitate the process, I made it in a bread maker, put all the ingredients in a bucket and turned on the first program. As soon as everything was mixed together (this is literally 1 minute of kneading), I turned off the bread maker and left it alone for 15 minutes.
  • After 15 minutes, I switched on the mode for wheat bread with the algorithm: kneading 1 - proofing for 30 minutes - kneading 2 - proofing for 30 minutes - kneading - proofing for 1 hour.
  • At the end of the program, the dough was taken out of the bread machine, divided into 2 pieces, rounded and left under a towel for 10 minutes.
  • Then she formed each piece: one into a roll for further proofing and baking in an L7 aluminum mold, the second for proofing in a rattan basket and baking on the hearth.
  • The last fermentation time is 1 hour. (Bread before and after fermentation)

  • At this time, I preheat the oven along with the baking stone to 230 * C.
  • Before planting in the oven, sprinkled the bread with water.
  • I put the L7 form on a stone, next to it I put a loaf turned from a basket. I stick a thermometer into each bun.
  • After 10 minutes, I reduced the temperature to 200 * C and baked until tender (up to 96 * C inside the bread). My hearth loaf is baked for 25 minutes, in an aluminum mold - 45 minutes. (Focus on your oven.)
