thick pumpkin puree 200 g
whole wheat flour 170 g
vegetable oil 50 g
chicken egg 2 pcs.
sugar 50 g
baking powder 1 tsp
soda 1/2 tsp
salt 1/2 tsp
oat flakes 50 g
gingerbread spice mixture (cinnamon, ginger, cardamom, anise, cloves) 1-2 tsp optional

oat flakes 40 g
sugar 50 g
butter 30-40 g

  • Thanks to the author - Elena Zheleznyak - I finally learned how to feed the wheat sourdough correctly. Therefore, a certain amount of feed residues formed. And then the question arose - what to do with them? Throwing food away - only on pain of being shot
  • Our favorite site probably has similar recipes. In the section on sourdough baking, I did not find anything and decided to show what I did.
  • So, let's begin. First, let's make the pumpkin puree. I chopped a piece of pumpkin into small pieces, added a little water and put it in the microwave for 5 minutes. We take the leaven (if it was in the refrigerator, remove it in advance), eggs (also warmed), chilled puree, vegetable oil, sugar (they say that sugar belongs to liquid ingredients) and mix. Mix dry separately. Combine dry and wet ingredients (you don't need to knead for a long time) and leave for 30-40 minutes, covering the dishes. At this time, we make a streusel from flakes, sugar and butter.
  • We shift the dough into molds, sprinkle on top (I only managed to smear it) with a streusel and put in an oven heated to 190 ° C and bake for 20-25 minutes.

Now comes the fun part. My muffins are lean (aside from Streusel) because I forgot to put my eggs. In general, it turned out to be a weekend delicacy for fasting people.
And the last thing. I have Nordic multi-grain flakes in my dough and streusel, and in the original, coconut flakes were added to the streusel (but I didn't have it).
