Ingredients

Liquid honey 100 g
Dry yeast (Saf-moment red) 5 g
Dough:

Wheat flour (I have a general purpose) 600 g
Cognac (I have brandy) 30 g
Ghee butter 30 g
Salt 2 tsp

Cooking method

  • For a chatterbox, heat the milk to 37C, add honey, mix, then add flour mixed with yeast. Beat everything with a whisk until smooth. Cover and leave for 20-30 minutes.
  • For the dough, add all the ingredients to the shaker, mix until the flour is completely moistened, cover and leave for 20 minutes. Next, knead until smooth. Kneaded in Ankarsrum for 10 minutes at medium-high speed.
  • * When kneading, I added another 35 g of milk, because the dough was strange. That is, it is sticky to the touch, but the consistency is dense. Dough at the end of kneading:
  • Wheat bread Honey-cognac
  • Then fold the dough, place in a greased container and leave in a warm place for 30 minutes. Then knead the dough, fold again, return to the container and leave for 60-80 minutes.
  • Then divide the dough into 2 equal parts, 750 g each. Round and leave for 5-10 minutes, then shape the blanks, place them in the proofing baskets with the seam up, cover with a bag and leave in a warm place for 60 minutes.
  • Cut and sprinkle with plenty of water before baking.
  • Bake in an oven preheated to 230C with a stone until the first browning (about 10-15 minutes), then lower the temperature to 200C and bake for about 15 minutes. Bake until cooked at 180C. The exact time depends on your oven. My total time was about 40 minutes.
  • Cool on a wire rack.
