Ingredients

Flour 500 g
Milk 100 ml
Purified water 120 ml
Olive oil Extra Vigin 2 tbsp. l.
Culinary fat (lard) 50 g
Fresh yeast 20 g
Salt 0.5 tsp
Oil for greasing a frying pan (preferably butter)

Cooking method

  • I propose another recipe that will continue our acquaintance with Italian cuisine. Crumpets called Tigelle - Tigelle (also known as Сrescentina modenese) originally from the city of Modena. But now they can be found all over Italy.
  • The name Tijelle is essentially the name of the clay discs between which the dough was once pressed and put on the fire to bake. Discs are a thing of the past, although this method of production is rare, and the name stuck. Nowadays, such crumpets are often baked in pans, lightly oiled, or in special metal molds. Eh, where to get one!
  • Crumpets are a good alternative to bread, cook quickly, have a very pleasant crumb structure, thanks to the addition of fat or lard to the dough. The ones I tried had soft texture, but firm enough.
  • And you can choose the fillings to taste! The traditional filling is lard chopped with garlic and rosemary. It's really delicious!
  • In tourist places, more and more stuffed with thin slices of prosciutto, salami, herbs and cheese.
  • The recipe is a lifesaver when there is no bread in the house! Try it!
  • Preparation
  • - Grind the sifted flour with yeast, add milk and water at room temperature, add olive oil and start kneading. This can be done manually or with a kneader.
  • - While mixing, gradually add fat or lard, salt slightly moistened with water.
  • Knead until smooth. Medium density dough.
  • - Next, we form a ball, put it in a bowl of sufficient volume greased with vegetable oil, cover with a film or a lid and put it in a warm place suitable for about one hour.
  • - After an hour, we knead the dough well, roll it out on a floured surface into a layer, 0.7-1 cm thick.Cut out circles with a diameter of 8-9 cm. (I kneaded twice, I love well-groomed dough.)

  • - Grease a frying pan with a thick bottom with a little butter and bake crumpets on both sides over medium heat. First you can cover with a lid, then turn the crumpets over and bake in an open pan.
  • - We put the donuts in a clean towel, wrap, after cooling, store in a closed container.
  • - When serving, cut or tear into two parts and fill to taste!

Note

In some recipes, a very small amount of sugar is added - one teaspoon without top, no more, will be enough.

I sometimes remove the frozen fat from the broth in which the turkey was cooked and add it instead of lard.
Goose fat is especially good in the recipe - it is healthy and does not raise cholesterol, on the contrary!

You can fry without oil at all, you can use more oil, I prefer only to grease the bottom of the pan.
