Potato bread

Ingredients

DOUGH:
Wheat sourdough 100% 100 g
Wheat flour 250 g
Mashed potatoes (ready-made) 90 g
Egg 1 PC.
Sugar 30 g
Water 60 ml.
Powdered milk 1 tbsp. l.
Salt 1 tsp
Butter (softened) 20 g
SAUCE:
Wheat flour 15 g
Sugar 10 g
Egg yolk 1 PC.
Milk 65 ml.
OTHER:
Yolk (for product lubrication) 1 PC.
Vegetable oil (for mold lubrication) 1 tsp

Cooking method

  • Peel the potatoes, wash, boil until tender.
  • While the potatoes are boiling, prepare the sauce to decorate the bread.
  • Beat the yolk, milk, sugar and flour with a mixer. On the stove, with constant stirring, over medium heat, bring the sauce to a thick mass, remove from heat, rub through a strainer. When the sauce has cooled, cover it with plastic wrap. and put it in the refrigerator.
  • Knead the boiled potatoes, let them cool.
  • We knead the dough. In the original recipe, it was recommended to first add 50 ml of water, and then, if necessary, can be increased to 85 ml.If after kneading the dough is still sticky, sprinkle the table with flour when working with the dough.
  • Let the dough in a warm place increase in volume two to three times.
  • Divide the dough into 9 equal parts, shape the balls.
  • Grease the mold with vegetable oil, evenly spread the balls of the dough. Cover the mold with foil and allow the dough to double in volume in a warm place.
  • Brush the dough with yolk.
  • We transfer the sauce to a syringe or pastry bag with a nozzle with a round hole, draw a net on the balls of dough.
  • We bake bread in the oven at a temperature of 180-200 * C (depending on the oven) for about 25-30 minutes.
