Cooking method

  • I rarely make yeast dough using fermented milk products, but this time I decided to replace milk with kefir.
  • The dough turned out to be silky, not sticky at all, very pliable to rolling and sculpting, in general, it is a pleasure to work with it!
  • Dough safe, unpretentious, but with some peculiarities: firstly, as already indicated above, it is on kefir, and secondly, I did not melt the butter, but cut it into medium-sized pieces and laid it on a kneaded ball of dough, lightly sprinkling it with flour. After the first rise, she kneaded the dough and mixed in the softened butter. In my opinion, it is with such an interference of fats that the structure of the dough turns out to be ideal, the fats do not envelop the flour and allow the gluten to work in full. There was no need to add flour during the cutting process.
  • The eggs were large, weight 2 x 120 g. I put 100 g in the dough, left 20 g to grease the top, mixing with cold water 1: 1.
  • Poppy filling. The poppy was mixed with granulated sugar, poured over with milk and allowed to boil in the microwave. I pounded the resulting mixture (you can punch it with a blender), then add semolina and boil it again in the microwave. Leave to cool and finally thicken as the dough rises. I put the amount of semolina on the eye, I look at the resulting thickness of the filling: it should resemble thick sour cream, not drip from the spoon.
  • After the 2nd rise, I kneaded the dough and proceeded to cutting. Divided it into 3 parts.

  • From the 1st I made a roll with poppy filling and raisins, rolled from 2 ends to the center, put it in a muffin (or bread) dish, laid a dough rope in the center. These are future butterflies.
