Ingredients

Dough:
Eggs 3-4 pcs.
Sugar 200 g
Salt pinch
Refined deodorized vegetable oil, etc. - certainly without any smell 175 ml
Flour 240-250 g
Baking powder 10 g (1 tsp with a slide)
Filling
Apples, better sour 7-8 pieces, about 1 kg
Ground cinnamon (optional) 1 tsp
Fill
Butter 75 g
Sugar 60-70 g
Crushed nuts 50-70 g

Cooking method

  • Beat eggs with a pinch of salt until white; pour oil in a thin stream, without stopping whipping. Add flour mixed with baking powder, stir quickly with a spatula. The consistency of the dough should be "pancake" or "charlotte". If it is too steep (maybe because of small eggs, or wet weather), stir in a few tablespoons of liquid, preferably acidic: sour cream, whey, fruit juice, but you can also milk or water; set aside.
  • Cut apples with peel into small pieces, mix with cinnamon, pour into a greased mold with a diameter of no more than 26 cm. Pour with dough. Bake in a preheated oven at 180 * C first for at least 30 minutes (and, depending on the oven, even longer).
  • Prepare the filling: melt the butter over low heat or in the microwave, not allowing it to boil; dissolve sugar in it; add nuts, crushed to the desired size, mix.
  • Without turning off the oven, remove the cake, carefully pour the filling on top, slightly smear it and bake for another 5-10 minutes. Turn off the oven and leave the cake in it for another 20 minutes.

Incredibly delicious pie! The most delicious apple pie. The common charlotte is resting. On top there is a sugar-nut crust, under it is a loose damp dough, apples of some unusual taste.

At the same time, there is no particular difficulty ...

Found on the forums SAY7, thanks to the author Monica from Crimea. Of course, I will certainly bake it again and again, and I will try it with yoshta, strawberries, quince - frozen, as well as frozen apples. Instead of cinnamon, I'll try additives: raisins, dried apricots, prunes, etc. And in the dough - vanillin. And in the filling - cognac or rum!

And a few of my observations.
Mix the flour with a spatula, and not with a technique: it does not like a baking powder. And fast.
If the dough is not liquid enough, then it will not penetrate to the bottom of the mold, apples or other fruits-berries at the bottom will flake off from the cake.
The wide and flat shape will spoil a little here, 26 cm is ideal.
How long to bake before pouring? When it seems that the cake is well done! It's still quite thick, plus raw apples.

Calories - the sea ... horror... In the evening I baked (that's why the photos are so non-festive), and at 4 o'clock in the morning, thank God, the half of the pie left after the samples went aboard ...

Yes Yes Yes! Great cake! Many apples, aromatic, juicy. And the "napkin" on top is very tasty.

Only I put less sugar in the dough - 3/4 tbsp. I add 1 1/2 tsp. vanilla sugar in the dough.

My form is 25 cm, detachable. I try to take apples of two types - 8 pcs. (800gr-1kg) - they fit in as many as three rows (I do not "tamp" them). I pour more cinnamon - one and a half teaspoons - I pour apples on top. I bake for about 60 minutes (we have an oven with a temper).

Now I'm doing the fill from:

50g butter
+2 Art. l. vegetable oil (odorless)
+2 Art. l. fine granulated sugar (with a small slice)
+ 1 tsp vanilla sugar
+ 50g shelled sunflower seeds / coconut / peanuts / hazelnuts / mixture of nuts
+ at the end of 1-2 st. l. rum.

Tatyana, thank you for your valuable advice on kneading the dough. I will also try to immediately mix apples with cinnamon - it will obviously be tastier and more beautiful. And the idea of ​​adding raisins, dried apricots is cool. I will definitely bake a pie with "apples + raisins + cinnamon".
I wonder if a handful of cranberries will fall on apples? I'll have to try if the apples are sweet. In a simple charlotte, it turns out well.
