Salmon in mustard-wine-cream sauce in a pressure cooker

Ingredients

salmon (salmon) 4 pieces 150 g each
mustard (Dijon) 2-3 h l
dried dill 4 pinches
dry white wine 125 ml
chicken or vegetable broth 125 ml
onion (small onion) 1 PC
cream 125 ml
potato 10-12 pcs (for 4 servings)
ground black pepper and salt

Cooking method

  • This recipe works, of course, for any pressure cooker, but I did it in the Instant Pot multicooker, so the cooking time may vary depending on whether it is a classic or electric pressure cooker, and which model.
  • (Classic pressure cookers do their job faster as higher pressures can be achieved.)
  • So:
  • 1. Pour broth and wine into the bottom of the pressure cooker, add finely chopped onion.
  • 2. Insert a steaming basket into the bowl and line the bottom with parchment / baking paper
  • 3. Brush the pieces of fish (one side) with mustard, sprinkle with dry dill, pepper and put the greased side up in a steam basket.
  • 4. Close the lid, at high pressure for 10 min. ("Manual" mode)
  • 5. In the meantime, peel the potatoes and cut them into not too large (but not small) pieces.
  • 6. After the fish is cooked, let off the steam, open the lid, take out the steam basket with the fish and set aside, covered with something to keep warm. You can lightly salt.
  • 7. Add the cream to the sauce left in the pressure cooker, season with salt to taste, add the potatoes and cook on high pressure again for 7 minutes.
  • 8. At the end of cooking, catch the potatoes, immediately pour the remaining sauce over the fish and call everyone who is hungry :-)
  • Or, if you want a homogeneous smooth sauce, then first walk with a mixer, then turn on the heating and, stirring, add a teaspoon of flour or starch.
