Ingredients

chicken or beef liver 500gr
sour cream 3 tbsp. l.
carrots (medium) 2 pcs
onion (not large) 2 pcs
eggs 2 pcs
flour 2-3 st. l.
salt 1h l.

Cooking method

  • A very easy recipe to prepare.
  • Rinse the liver, cut out large vessels, cut off the films and fat, if it's beef liver, just rinse the chicken.
  • Peel and wash carrots and onions.
  • Pass through a meat grinder, first the liver, then the carrots and onions, in order to push the rest of the onion, you can skip a small piece of bread at the end.
  • Break 2 eggs into the liver-vegetable mass, and add 3 tablespoons of sour cream. In principle, sour cream can be replaced with 50-70g of cottage cheese chopped with a blender into a paste.
  • Mix thoroughly, I hand-stir with a fork until smooth. Add flour and salt and stir again. You should get a mass similar in consistency to thick sour cream. That is, as for ordinary flour pancakes.
  • I fry in a special frying pan for baking pancakes, but you can also use a regular frying pan. There is no oil in the recipe at all, from fatty foods - the liver itself and sour cream. If you fry on a non-stick surface, then before the first pouring of the mass, you can grease it with oil, but I don't do that either.
  • I got 3 pans = 21 pieces of pancakes 7cm in diameter. We eat with sour cream, my husband sometimes with mayonnaise, all the same, don't add to the pancakes from the liver, they are always a little dry.

Liver is generally a very fatty product, so I don't use oil in this recipe. I do not fry the onions and carrots in advance, but grind them raw in a meat grinder with medium holes.
Sour cream or cottage cheese soften the specific taste of the liver, but do not remove it at all and make the pancakes a little juicier. If there is no sour cream or cottage cheese at home, you can replace them with mayonnaise, but then the fat content of the pancakes will greatly increase.
P.S. The pancakes can also be eaten cold, used on sandwiches with salted cucumber or on liver salad pie

Olga, it seems to me that garlic does not go well with the liver, the liver has a very strong specific taste and garlic, it seems to me, is already too much, but more greens will soften the taste of the liver, so of course this is an interesting idea.
I just tried to make it more dietary - less high-calorie, and my husband likes to add mayonnaise to me everywhere, that's why I mention it (mayonnaise).

Unfortunately, my liver cannot withstand so much fat, so I invented my own version without additional fats. Apparently it was possible to add the word "dietary" to the name, but the liver is not quite a dietary dish by definition, so I did not emphasize this in the name.
