Ingredients

Beef brisket 0.5KG
Minced meatballs (beef / pork-60/40) 0.5KG
Minced meat for dumplings (beef / pork-60/40) 0.3 kg
Potatoes 5 large tubers
Carrot 1 PC. (large)
Bulb onions 1 PC. (large)
Dill greens taste
Salt pepper taste

Cooking method

  • Let's prepare the beef broth.
  • Fill the beef brisket with cold water (I took 4 liters), bring to a boil, then reduce the heat, remove the resulting foam with a slotted spoon. Add the head of peeled onions. We bring the meat to readiness. Then we take it out and let it cool slightly. We also take out the bow - we no longer need it).
  • We make mini dumplings.
  • I made the dough for dumplings in a bread maker. Minced meat - beef / pork-60/40, salt, pepper to taste and onions passed through a meat grinder.
  • Roll out the dough thinly and prepare the juices for the dumplings. We should get them a little more than an average hazelnut:

  • It was convenient for me to cut it on a rolled sheet of dough with a metal cork from vodka)). The size was perfect. I grabbed the meat for the dumpling with an olive fork. Otherwise, it is difficult to take the amount of minced meat that could fit in such a mini-juicer.
  • I make dumplings in advance and then freeze them. And then the time spent on cooking soup on day X is much less.

  • Minced meat - beef / pork-60/40, salt, pepper to taste and onions passed through a meat grinder. We roll the meatballs the size of mini dumplings. We put them on the board waiting in the wings.
  • We continue cooking the soup.
  • Cut the carrots into small cubes and fry in vegetable oil.
  • Cut the potatoes and cooled brisket into cubes equal in size to meatballs and mini-dumplings.
  • We send the potatoes and brisket to the salted broth, after a couple of minutes add the meatballs, bring the potatoes to readiness, add black pepper from the mill and finely chopped dill. Bring to a boil and remove the pan from heat.
  • There are two nuances in adding dumplings to the soup:
  • 1. If you cook soup at one time - add dumplings a couple of minutes before the end of cooking (they are boiled for no more than 2 minutes);
  • 2. If you cook the soup for a couple of days (like me), then the dumplings are boiled separately, you heat the soup, and then add the ready-made dumplings to it.
  • The soup is ready, I also like to add fresh dill directly to the plate.
