It just so happened ... Irinka provoked a repeat. It's stupid that I didn't realize: there can't be a baking powder on the site !! Well, it can't.
It's time for me to apologize for the importunity.

Yes, you can buy, although it comes from the store much, much more expensive. But, firstly, it is still unknown what can be added, and, secondly, you just forget to buy it! And then once - and a home from the henchmen ... And there is always.
Venera007
TATbRHA, I know what you can buy, but I don't want to, so I always do it myself, and even if I run out of citric acid, I'll go to the store and buy citric acid for baking powder, and leave the baking powder on the shelf :)
MariV
Tanya, the site has a lot of interesting things, but it is not always possible to find.
And it's very good if someone updates the info! Thank you too!
Albina
Tatyana, thanks for the recipe. I mainly use baking soda, but I'll take your recipe into service
Tumanchik
Thank you very much Tanya. Don't look at what is there. That still needs to be found. I would never have found it by its table of contents. But I'll throw yours in the bookmarks (and not only me). Everything is simple and affordable. Thank you for not ignoring my request.

I still have citric acid in the grinder vzh-i-i-i-h, otherwise it has large crystals, and I mix everything
And now I'm in trouble - the coffee grinder is broken
tana33
Tatyana, Thank you ! ))) I just get on recipes where everything is measured with teaspoons, so I flop,
and yours is normal right away, 200g, our size in general)))

It is possible in proportions:
Tan, but this is the most convenient for me. Only I tried to do it many times before, after a few days I open it, and I see that he reacted.

LLC, what advice, I will definitely try, thanks, otherwise I have already stopped using the baking powder, since I forget to buy, but apparently it reacts from moisture. Somehow in the old fashioned way, I quench soda with acetic acid.

Fantik
TATbRHA, yes, this recipe is more convenient. Thank you very much!
My hand doesn't go up to buy baking powder, like many here. I am confused by the pyrophosphate in the composition. Ammonium too ...
While mixing lemon with soda in a spoon. Now I will make a whole jar. Thank you.

Anastasia, ahha, but I am generally embarrassed to buy 10g each that I have for a whole pack of 0.5 at home
Fantik
tana33, well yes. And that too. I just don't remember how much baking powder costs.
And I began to trust homemade ones after "reconnaissance in force" ... Since biscuits work well with him, then nothing else is needed anymore! :)))
Fantik
Girls, I bought cornstarch, and there is no jelly with it ... (((((((Now it lies dead weight. I will put a little bit in the cupcakes. But to mix baking powder on it, this is the very thing, right? If I plan to put it in biscuits most often. ”I won’t spoil biscuits, right?
Leka_s
Fantik, Anastasia, leave the corn starch on the ice cream and on the custards, if you add flour / starch to them
Fantik
Leka_s, thank you very much! I have not made such creams yet, because I became interested in the site only this summer (although I registered for three years, with the purchase of a bread machine :))). There are so many interesting things and so much to master.

While the next line is wet meringue)))))

kil
And citric acid needs to be ground, is it more lumpy in structure than the other components?
Anise
Tatyana, thanks for the recipe!
I have never made baking powder myself, so I will have to try.

Flour or starch 120 g
The question arose: what is still better to use - flour or starch? If starch, then which one to give preference - corn or potato? All the ingredients are in stock, so I thought about what to choose.

As for me, it is better to grind, the composition of the baking powder will be more homogeneous
kil
Leka_s, so I thought rightly, you need to stir up, otherwise they are completely crazy, already a bag of baking powder costs 7 rubles.
TATbRHA
olgea, the baking powder reacts because it is not tightly closed, and nothing more. Take a jar with a ground lid (and a lump of sugar). I have it in a small plastic jar with a screw cap.

Fantik, yes, that's it! They will not deteriorate - on the contrary!

Anise, try with that, the other and the third - choose. Or mix!

I don't grind. And, I think, this makes sense: after all, we put the baking powder most often in an acidic environment - kefir, whey, sour cream, etc., part of the soda reacts immediately. And such dough is best left alone after a short kneading for 20 minutes before baking. During this time, the large crystals of acid will dissolve and will also do their extra work with soda.

Oh, kil, life will teach you to laugh through tears ... Of course, ofigeli, its price is zero point hundredth kopecks. There is a bag, paint on it, glue ...
tana33
oh, and I bought myself a pretty jar
like this
Homemade baking powder (baking powder)

I kept thinking, well, where is such a small beauty then
and here, Tatiana
TATbRHA
tana33,
afnsvjul
So what starch is better to take?
TATbRHA
afnsvjul, anyone is better! And flour is better too!

And we have 3, 8 and 9 rubles.
Yuri198
And, then the amount of the mixture indicated at the beginning, for how much dough is calculated?
Leka_s
Yuri, usually 20 gr. baking powder is designed for 500 g of flour .... the indicated weight of the mixture is 200 g ...
TATbRHA, Tanyush, nothing, that I'm talking here with you
TATbRHA
Leka_s, .

Yuri198, 20 teaspoons - 50-60 glasses of flour; it's 8-9.6 kilograms ... Well, I hope, not at the same time ...

So why add a baking powder to an acidic environment at all? In my opinion, you can simply add soda, which will react with the acid of the same kefir / sour cream, etc.
I add baking powder to the dough, in which there are no (or very little) acidic foods, so that the soda works.

I, too, when I see baking powder in the store and the price of it, quietly go nuts. Obviously 99.99% of the price in it falls on the bag, wages and depreciation of the filling line

Tanyusha, "having finished" all the stocks of industrial baking powder, I waved my hand to the food industry forever and prepared a whole jar of homemade according to your recipe! Happy as an elephant!
Thank you so much!
TATbRHA
Irishka, malades! Now you have a cheap baking powder, always at hand and with the ingredients you know. That's three +++!
solmazalla
TATbRHA, Thanks for the helper! I made a jar, I will try, I'm tired of buying a store baking powder. The only thing, the pilot is in my crystals, like sugar, and there is nothing to grind
But I hope everything works out ...
TATbRHA
solmazalla, don't worry, my acid is also quite large in crystals, but it dissolves for a sweet soul! You don't have to grind. Only store in a dry place (e.g. NOT in the refrigerator, but just in the kitchen cupboard.) "In the cupboard", as they used to say ...

TATbRHA, Tanya, thanks. I was looking for how to make a homemade baking powder. I came across your recipe. Today I will make it.
