Ingredients

chicken fillet 750 gr (one breast)
egg 1 PC
salt, spices taste
onion 1 PC
any hard cheese (for filling) 130-150 gr
butter (for filling) 50 g
diced loaf (dried without crust) more than a half
vegetable oil 100-150gr

Cooking method

  • I looked here on the forum and did not find, very tasty cutlets "Paparats kvetka" if you translate (Flower of the paparatnik), in Belarus they are prepared and served everywhere from restaurants to factory canteens, it turns out very tasty and not so expensive if you take pork or beef recipe I used to take it on the Internet.
  • Preparation:
  • First, I cut the loaf into small cubes and dry in the oven.
  • For the filling, I grate cheese (I grated it on a beetroot grater) and add softened butter to it, mix until smooth and put in the refrigerator.
  • I pass the chicken fillet and onion twice through a meat grinder, add a slightly beaten egg (I don't remember who and when told me that eggs need to be beaten into cutlets, they then turn out more magnificent), salt, spices to taste and knead the minced meat.

  • I immediately form cutlets from the minced chicken (I wet my hands all the time with water, the mince is sticky), I got 11 pieces, and then I divide the filling by the number of cutlets (I make sausages from the filling).

  • Then I take a minced meat cutlet and make a cake out of it on my palm and put the filling there and wrap it, give it an oval shape.

  • Then I plan cutlets in bread cubes, lightly press them into the minced meat so that they do not fall off. And so all the cutlets.

  • I fry in a deep frying pan in sunflower oil, pour oil into the pan about 2-2.5 cm.

  • I fry the cutlets on both sides, the loaf quickly browns. Then I put the cutlets in a baking dish and bake in a preheated oven to 180 degrees for 30-40 minutes.
  • It turns out very tender, juicy, fragrant cutlets.

A bit of the history of the name of these cutlets. :) Since the mid-70s, the era of namelessness ended and the restaurant at the kitchen factory began to be called "Paparats-kvetka". According to the "rules of the" restaurant "business of that time (of course, the words in quotation marks, since they did not know about any business at that time), each restaurant was obliged to have its own signature dish. This is still a current practice: every catering establishment is especially proud of some dish in its menu. So in the restaurant "Paparats-kvetka" the most popular cutlets were recognized as a specialty. They were made from minced chicken with added cheese and butter. These cutlets were considered a festive dish: their presence on the table always indicated that people had gathered for a special occasion and that they intended to "boo". Of course, these cutlets were invented long before their official "coronation" as the signature dish of a restaurant in a truly legendary kitchen factory. Without hesitation, they named the cutlets in honor of the restaurant itself - "Paparats-kvetka". So I went for a walk around Minsk recipe for cutlets "Paparats-kvetka"
