Brewed bread with corn flour

Ingredients

Welding
corn flour 50 grams
boiling water 100g
Dough
welding all
active wheat sourdough 100% moisture 150 grams
water 100-120 grams
flour in / grade 320 gram
sugar 1 tsp
unfermented malt 1 tsp
vegetable oil 1 tbsp. the spoon
instant yeast 1 gram
salt 9.5 grams

Cooking method

  • Welding
  • Pour the flour with boiling water, stir well so that there are no lumps. Cover and wrap. Allow to cool completely.
  • Sourdough feed 6-8 hours before kneading.
  • Dough
  • Mix flour, malt and yeast.
  • Dissolve sugar in water.
  • Mix the leaven, tea leaves, oil and water.
  • Add dry ingredients.
  • Start kneading the dough. Add salt after 5 minutes.
  • The total mixing time is 15 minutes.
  • The dough is soft, does not stick.Brewed bread with corn flour
  • Fermentation for 120 minutes. Stretch-fold once every 60 minutes.

  • We form bread of any shape.
  • Proofing seam down 60 minutes.
  • We make incisions.
  • Baking on a stone, preheated with the oven to 240 degrees, the first 10 minutes with steam.
  • Remove the steam, lower the temperature to 180 degrees, briefly air the oven.
  • We bake until tender for another 20-25 minutes.
  • We take it out, let it cool, cut it and enjoy!
