Horseradish Amber

Ingredients

horseradish roots 600g
peeled apple 200g
carrot 200g
plum yellow 200g
salt 3 tsp
sugar 2 tbsp. l.
lemon acid 1/2 tsp
vegetable oil 50ml
apple cider vinegar 6% 200ml
boiling water 350g

Cooking method

  • Refined, beautiful, delicate, sweet and sour, fragrant ... horseradish (if you can say all this about him). It goes well with fish, sausages and pork, will add nobility to aspic from fish and jellied meat. Apple, carrots and wash plums, peel, cut and pass through a meat grinder or blender. You can do it without plums, taking 300g carrots and 300g apple, but tastier with plums. Add salt, sugar and citric acid, mix. We put the mixture in the microwave at full power for 8 minutes. The horseradish roots are thoroughly washed and cleaned, the skin is scraped. Pass the horseradish through a meat grinder or blender. If you are doing it in a meat grinder, like me, put a bag on the container and the mouth of the meat grinder to get rid of lacrimation. Mix horseradish and fruits and vegetables and put in the microwave for another 4 minutes. Add oil and vinegar, pour in boiling water and break with a blender until smooth. I only had a submersible blender, so I did it again by putting on a bag, but since almost blindly, there were many non-uniform pieces left. But it even gave some charm to the final product. We put in jars, tightly close with lids and sterilize in boiling water 0.25 l for 10 minutes, 0.5 l for 15 minutes, 0.7 l for 20 minutes. Sterilize in a pressure cooker at 115 * C 0.25L for 4 minutes, 0.5L for 5 minutes, 0.7L for 6 minutes.
