Ingredients

active wheat sourdough 100% moisture 140 gram
buckwheat flour 50 grams
bran (I have wheat) 20 grams
wheat flour 1 grade 100g
wheat flour / grade 200 grams
water 220 grams
buckwheat honey 1 tsp
fresh yeast (dry) 3 (1) gram
salt 9 grams

Cooking method

  • Feed the sourdough 5-8 hours before baking.
  • Dissolve yeast in water (if dry, then follow the instructions).
  • Add honey. Stir.
  • Mix the starter with the mixture.
  • Add three types of flour and bran.
  • Knead the dough with a hook.
  • Add salt after 5 minutes.
  • The total mixing time is 12-15 minutes.

  • Lubricate the table, hands and utensils for fermentation with oil.
  • Stretch the dough, fold and ferment.
  • Fermentation for 90 minutes. Stretch-fold once in the middle of fermentation.

  • Form bread of any shape.
  • Proofing in a basket, seam side up, 45-50 minutes.
