"Velvet" pumpkin puree soup

Ingredients

pumpkin 500-600gr
big red pepper 1 PC
medium onion 1 PC
clove of garlic 1 PC
a pinch of nutmeg
a pinch of salt
chicken broth (vegetable or milk) 2-4 MV st.
vegetable or olive oil 1-3 st. l

Cooking method

  • I love pumpkin puree soup from Anna Kitaeva's book "I love a slow cooker", I decided to share with everyone who loves pumpkin))
  • I did not take a photo of the process, there is nothing complicated, the main thing is that the pumpkin is there.
  • - Wash and peel vegetables. Coarsely chop the onion and bell pepper. Finely chop the garlic.
  • Cut the pumpkin pulp into slices about 2 cm long.
  • - Pour vegetable oil into the MV bowl, turn on the Frying program, fry the onions until golden brown, then garlic, fry until the aroma appears.
  • - Add red pepper, fry for a few more minutes, continuing to stir.
  • Place the pumpkin and salt the vegetables. If the pumpkin is not too juicy, add the stock. Simmer vegetables for another 5-7 minutes, stirring occasionally.
  • Switch off MB.
  • Pour the vegetables with broth, milk so that they are slightly covered with liquid.
  • Switch on the Milk porridge or Stew program for 50 minutes.
  • At the end of the program, place the vegetables in a suitable dish and purée with a blender, adding broth or milk to the desired consistency.
  • Salt the soup and add spices to taste. Heat the soup in a convenient way and serve warm.
  • When serving, you can put a teaspoon of natural yogurt in the soup.
